    Really a filling fail-safe that is versatile and takes any prescription to another level. I remembered in a very traditional English recipe that can be done from that filling the Shepperd's Pie, which would be delicious too and is a great choice to accompany a pork belly stuffed with herbs and vegetables.     thanks to previous Jamie Oliver recipes which have been online for some time now, it has become a tradition that every year for the Christmas dinner, I take charge of making the stuffing and gravy. I use chicken wings to make the gravy and pork chops for the stuffing. what makes it all the more appreciated in the household, is that I am a vegetarian and have been since roughly the age of 3. don't get me wrong I'm all for people eating meat, I just don't enjoy the taste and texture of meat myself. I would like to thank all involved with getting these recipes online, I'm not sure that everyone appreciates the cost and effort that these sorts of productions require. for me they have meant that even when living on low wages as I do, that I am still able to give a gift to my family that they appreciate. I look forward to further videos in the future!

    Just adding on to the dried fruit, raisins is what I normally use and I recommend using that if you want an extra sweetness to the stuffing :)

    Crumbled up black pudding is also great in stuffing :) you don't even have to like black pudding it just gives it a great depth and earthy taste :)

    Hi Jamie. Happy Christmas. I tried this out today with one or two differences. Didn't have cranberries, but chopped up a few dates, added a teaspoon of crushed fennel seeds and some chicken livers chopped up (about 100g per 500g pork). Loved the different textures from the meat and nuts, and the hits of sweetness from the dried fruit. And it was great in the barbecued roast chicken. Cheers from Port Hughes.

      +Jamie Oliver Thanks! What I'll do, is use two Turkey legs and pressure cook them this first notch and keep there for 15 minutes. In the mean time prepare your stuffing. Than take the legs out, to cool and shred meat out. Return the leg bones to the stock. And let it simmer and reduce, by 1/2. The problem is the loin. It needs an Zoro cut. Or two of them and of course a butchers string. The turkey meat is becoming part of the stuffing. :) I'll make it next week, will use roasted beetroot and Asparagus & Spinach Puree with heads as sides.... ;)

    So I've decided Im cooking Christmas dinner by myself this year - cranberry sauce, honey-roasted carrots, Jamie's Fail free stuffing, Turkey and gravy - all of which Im making for the first time! Yep, I know :D
    I'm very serious about stepping up my cooking game. Planning ahead every step.
    Spent the past two full days just going through numberless recipes and decided THIS is the simplest, most clear, yet exciting stuffing video I've watched.

    I literally just pulled my first attempt out of the oven and WOW! I couldn't find any chestnuts at the supermarket, so I went with hazelnuts and pine nuts instead. For herbs I used fresh home-grown sage, rosemary, and thyme. So now the bulk of the seasoning is ready for tomorrow (just need to warm), and the rest is ready to poke into the turkey tomorrow.
    Also, given this was my first attempt and it was a large batch, I was unsure about the amount of salt and pepper to use so I added a little less than I thought, mixed well, and gently fried a small amount (about a tablespoon). This gave me an idea of the final product and allowed me to add just the "right" amount (for my taste of course). If anyone else is unsure about how much salt and pepper to use, try that.

    So I typically use a sage sausage and reverse the ration of bread to meat, then add the herbs and onion as well as about a whole bulb of roughly chopped garlic, then stuff the bird everywhere I can fit the stuff plus a large casserole to get crunchy. I don't mind that the bird takes longer since we get turkeys with enormous breasts here in the states, which take for freaking ever. I make sure to never use egg in my stuffing and I put in the carcass as hot as I can stand it so that the oven doesn't have to heat the stuffing before the bird starts to cook around the ribs. As for nuts in my stuffing, that is a no go so that nut allergies aren't put off from eating the centerpiece of the meal...however, an assortment of nuts will go on top of thinly sliced yams then drizzled with a molasses, butter, brown sugar, maple syrup concoction then lightly dusted with cinnamon, nutmeg, and a wee bit of ground chilies and brown that all in the oven till the edges start to get crunchy....sorry got carried away, guess it is time to roast another turkey

    I love the stuffing recipe. I just always thought it was made without meat thou? when i grew up it was always made with slightly stale bread and herbs & saltana's. Nz & Aust . Love You Jamie x Would be great to hear your opinion.

    I'm really torturing my-self here. It's Christmas, I'm alone and really ill with swollen tonsils and ulcers, haven't eaten in 3 days, still feeling rubbish, and I'm just sat here watching all these Christmas Dishes being prepared.     i duno i guess we do stuff a lot more different in the usa but to me i'd call that a pork stuffing inspired meat loaf instead of stuffing. for us usally our stuffing is mostly bread with little bits of other stuff in it.

      +Magician12345 In the UK stuffing is mostly meat and the bread is to bulk it out and make a softer texture. Even vegetarian stuffings aren't just bread, the bulk of them is lentils or mushrooms or whatever. Just bread with bits in as a stuffing sounds dry and bland to me.

      +cherub2918 it's not bland it all. You can add a lot of pork sausage to it, add seasoning and with enough chicken stock make it nice and moist. I like to use sourdough bread for mine.

      I was thinking the exact same thing. You could serve this as a meatloaf and it would be an excellent main dish. I wouldn't want to serve this with turkey as it's far too meat-dominant. I'd love to make this as a meatloaf though.

      I think maybe you just haven't ever seen it :) I live in America and have seen, eaten and made all different kinds as well! (Some ppl think that stuffing means stove top out of a box or the crappy stuff in a bag,and that stuff just isn't very good/exciting at all!)
      I've seen people add dried fruits, olives, sausage, herbs, chestnuts, mushrooms, etc... There's even yummy cornbread stuffing! And people use all sorts of crusty breads for regular stuffing.
      I've also seen very yummy Asian varieties of stuffing now too!
      We definitely have exciting versions of stuffing here too, I hope you get to try a yummy one some time! :D

    Beautiful but it's a lot of meat to be called a stuffing ....More bread and less meat cause it looks like a meatloaf. But looks great. My fav stuffing is Oyster dressing. I can watch and listen to you all day long ... Happy Holidays....

    Culture shock there! American style is mostly bread, as far as I know. But what do I know, my family doesn't make stuffing.

    "Meat's expensive so here is a stuffing recipe that is 90%+ pork shoulder". Well done stretching out that meat to such great lengths!

      He's not trying to stretch it a long way. He's just explaining the origins of stuffing. Much like a stew was always left over scraps chucked in a pot whereas now its different. Merry Christmas
