- You don't have to be keto to benefit from this technique for making wonderfully fresh, light and creamy salad dressing. I don't think I've come across a recipe or technique that is this simple and versatile.

I'm using this recipe to make Blue Cheese dressing and I have come up with a procedure that makes my life a little easier, and I thought I would share it.
1. Buy some wide mouth 16 oz mason jars
2,. Pour one cup of heavy cream into the mason jar and mark the jar with a sharpie - never dirty a measuring cup again. Or just use the 1 cup mark built into the mason jar if you trust that to be accurate.
3. Add salt and pepper to taste and 2 tsp of vinegar
4. Put lid on and shake till frothy - Never dirty a bowl or whisk again
5. Add ½ a blue cheese container
6. Use a stick blender to break up the blue cheese and mix it with the cream. Stop when you get to your desired thickness
7. Pour in remaining blue cheese and stir in with a tablespoon. You may need to do this in small batches to make sure it all fits.
8. Put lid on and toss in the fridge.
Way less stuff to clean up.
And to clean the blender... Put a glass in the sink. Add dish soap and hot water. Run the immersion blender on high for 30 seconds to clean the inside where the blades are. Pull it out and wash the outside with a soapy sponge. Rinse off and throw in dish rack to dry.
I love this 🙌🏼🙌🏼❤️
I'm as old as dirt - and my mother ALWAYS made cream/vinegar dressing for both cucumber salad (cukes from the garden, of course) and garden lettuce salad. It was on the menu almost every single night during the summer. Now why I never thought to try that mixture on my daily salad, I do not know! Thanks for bringing this back out of my old memory bank!
Because you got too used to buying stuff!! :)
Yup, this is how I've ALWAYS made creamy dressings
My mom made the same dressing but she added a pack of sweet & low.
I HAVE to make this! Does it store in the fridge for a few days??
Me too Jean! My mom made dressing all the time, Russian was tomato soup with vinegar , sugar and oil if I remember right!
I stopped eating salad because of the salad dressings out there on the market (even the Keto ones). The dressing recipes I've tried from Keto youtubers in the past were just too much, but as soon as I saw this video, I made the Ranch version just using the herbs I already had in my pantry. Honestly, the best salad dressing I've ever had, so easy and quick! This is literally an answer to my prayer! Thank you so much for all the work you do to share your recipes, tips and tricks. They are much appreciated!! God Bless Serious Keto!!
😊
Milk + lemon juice is a way to make sour cream or buttermilk, so using heavy whipping cream + vinegar is basically the same thing - only thicker; especially if you refrigerate it overnight. The process that this uses is called 'clabbering'.
When you really like something your face lights up. All the older ladies in my family made this simple dressing , it’s the one I grew up with. Now please teach people how to make Hollandaise sauce. It’s so Keto, takes 10 minutes, and works great with an immersion blender, or whisk if you’re old school.
GreenEyes- Hollandaise is my go-to flavor indulgence while eating keto. I make a batch, freeze it in an ice cube tray and use the blocks one at a time on eggs, steak, veggies, quiche, or whatever I want to sauce it up. They melt so quickly. A quick stir in a small dish after a minute in warm water to soften and it is good to go! Yumm!
@@SimpleTruthsWork would you mind sharing your recipe?
@@lisasellers8627 did she share it?
@@Sbannmarie no. I have not seen it anywhere.
@Lisa Sellers Bummer...I want that recipe too!
My mother used to make my father a vinergarette dressing every night for his salad. He would take that and add mayo to it to make a creamy dressing. Since starting keto I've been eating so much salad but was having a difficult time finding dressing that were keto but taste good. So, I've been making my own vinegarette with avocado oil, vinegar and mayo! Tastes so much better. I'm going to try your way tonight! Thanks for another great idea!
This is great. I have been buying the Primal dressings but they are sooooo expensive.
~ I tried Primal - very disappointed ... 😡
Agree, pricey and not very good
Yuck. 🤢
I think Primal seems to have a problem with consistency. It thickens up too much doesn’t come out of the bottle.
I learned how to make this dressing from Jacques Pepin. He said it was a standard dressing growing up and he continues to make it to this day. I love it and if you think about it, your only calories are in the whipping cream. Oil based dressings have a lot more calories.
What I love about this is versatility in small amounts. I get tired of salads because day after day the dressing is the same. I mean, who wants to throw away half of a bottle of store bought salad dressing because you are just plain sick of it?
With this recipe I can easily change up my dressing so my salads don't become "boring".
Thanks!
I'm doing strick keto (
This is great! I’m 77yrs old and I bet I’ve only bought 3 bottles of store bought salad dressing in my life. I didn’t like any of them. So I’ve been making dressing for years but mostly olive oil based. I make mayo (also for decades) and use that for creamy dressing……but this is really fast and I always have heavy cream in the fridge. So I’m sure it will be my new mainstay. Change up will be with homemade sour cream. Thanks a million. We need fast, simple recipes that taste good. Some keto stuff is a bit disgusting ( IMHO). Especially bread items. 🤨
So simple, so easy. Cannot wait to try this. Steve, you are the first source for my KETO recipes, information and advice. Please continue to provide this type of useful and important content. You are helping to make a lot of people a lot healthier.
The best recipe, actually an idea, that I ever got from Jacques Pepin was what he calls "Fridge Soup." Whenever you stand in front of your open refrigerator trying to decide what to make for a meal, and you find small amounts of lots of leftovers like cooked meat, cooked veggies, raw veggies that are going to go bad if you don't use them soon, and salad greens, etc., take every thing out and dice it into bite-sized pieces. Put it all into a pot with whatever broth or stock you have. If you have none, add water and some bouillon cubes/packets. Add whatever dried spices you want, such as oregano, basil, thyme, salt, pepper. Bring to a simmer and cook until the raw veggies are tender. Taste for seasoning and adjust. There you have it---Fridge Soup! Genius! This is a super way to use up all of your leftovers, and you can call it "high cuisine" because the technique comes from such a respected chef as Jacques Pepin!
I have made this a couple of times and simplified it even further. Add all ingredients to a jar and shake until you get the right consistency. Thanks for the recipe!
Another person recommended a shaker bottle (with the little wire ball). 🙂
If I had known a creamy dressing was that easy I would have done it before I started keto. I feel like a whole new world has opened up to my taste buds since I started watching you channel. Black garlic? Oh heck yea I am going to be hunting some of that down this weekend.
You will be SO happy you found it =)
I've seen it at Costco
@K W why, what are you going to lose if you don't.
@K W on the off chance you haven't tried it yet, you should. It's sweeter and less pungent than the fresh - and it enhances flavors via umami.
I had a smaller bulb variety and they were like sweet, faintly garlicky, gummy bears. They made the dressing really pop in flavor.
Perfect timing as usual Steve! I've been buying a lot of dressings and they are gross. I used to make my own oil and vinegar, this is a great addition!
YES, a nice add to the same old stuff, love this!
This is excellent dressing! I added some dried herbs, squeezy garlic, and tiny capers along with some of the juice from the bottle of capers. I put it all into a small jar, and just shook it up until I got the right consistency. Thanks!!
OK so this will help me immensely on my weight loss journey at 57 to get my health back so i can enjoy the next 20 years! Thanks for the tips! I spent most of my early years at 180 lbs. with no regard for anything. I am now at 240 lbs. Your channel is one of my go to pages. Oh and since I am not really a Keto specific eater I found that a Teaspoon of half and half goes great with the Bleu Cheese recipe for texture that I prefer. I love it and thank you!
This is one of the few videos where someone uses very common ingredients. This means it will be cost effective and we're not spending unnecessary amounts of time making it. Well done!
I just made this easy heavy cream/vinegar salad dressing. Fantastic recipe! It was delicious with just S&P, cream, vinegar, but adding homemade Ranch seasoning took it to a new level. Wow! Can't wait to make it more ways. TY for sharing something so clean, easy, quick to make and delicious! I love all you share, your experiments on yourself, in the kitchen and watching your reactions. Your facial expressions readily reveal your thoughts and it's cool to see that. I began keto a few weeks ago - well started and am still learning a lot - from watching you and recently got my Keto MoJo from your lead. Learning more each day. Thanks again for everything!
I added chopped black olives and avocado to the salad and a little chopped dill to the dressing. And you are right! That black garlic is delicious!
Awesome! I love that you're experimenting with the base recipe.
This video deserves a “STAR”! My husband & I started Keto last year. Finding a Keto salad dressing is difficult. We started making our own , however, ours wasn’t as good as the samples you’ve shown. From our home to yours….”Thanks Steve”!
🙂
Now I understand how the UK folks call it “Salad Cream”! Looks Heavenly! Thanks!
Ooo, a little anchovy paste would make for a great Caesar dressing, too!
Oh yeah. Believe me, my mind has been racing with the possibilities. 😉
@@SeriousKeto swap the vinegar for lemon juice, add a dash of Worcestershire and dijon, and the parm and pepper of course... And then it won't kick your teeth in with the mayo flavor. (Although, now that I'm making your homemade mayo instead of using Hellman's, that doesn't sound nearly as unappetizing as it used to!)
Are you kidding me? This is amazing. Thank you Steve!
I have used sour cream and/or mayonnaise as the base for our creamy dressings for years. It never occurred to me to use heavy whipping cream. Thank you for another great tip!
Yes, me too, I thought I had to use mayo but dislike all the alternative mayos so just gave up. I can't wait to try this!
@@sundoesshine8800 - homemade Mayo is so simple, and SOOOO much better than all those “alternatives” on the market…Steve has a couple of videos on Serious Keto that are wonderful! I suggest the one using dill pickle juice as a sub for lemon juice. Hope you’ll decide to give it a try!!
p.s. - I’m trying this salad dressing technique, as well…such a great idea. Can’t wait to try the bleu cheese version!😉😊
This is by far the best thing ever. I can't seem to do mayo consistently, and I eat a lot of ranch. I just made this in 2 minutes and it is so good. I can now toss my bad oil ranch. I am so happy! Thank you Steve!
I’m so glad. Thanks for the comment.
Yes, the smile says it all! lol
Seriously Steve you just blew my mind. How did I not think of this already, so brilliant as always.
I'm trying this tonight! Bought salad fixings last night. Someone else mentioned the timing of this video. I agree! Thanks Steve.
I just made this and it is DELICIOUS! I wanted to try for a ranch dressing flavor. I am so impressed with how flavorful and easy this is! Thank you so much for sharing!
I used:
1c organic HWC
Salt & pepper (eyeballed it)
2tsp organic raw unfiltered ACV
2 cloves minced garlic (I use a narrow microplane grater)
1.5-2 tbsp organic fresh minced dill
Approx 1 Tsp Greek seasoning
Approx 1/2 cup fresh grated parm
Sounds like a great modification of the base recipe.

Hey Steve! Great great great video! Chef Pepin is a true OG legend and I love that you introduced him to your viewers. I also love that you referred to this as a technique. Technique is what allows us all to grow as chefs and cooks and It excites me to know that your viewers are going to take this and run with it and make amazing food memories ❤️ I really hope you make some more videos like this. Just because we are keto doesn’t mean we can’t learn from and pay respect to the masters. I personally love the adaptation that we have to do sometimes to make that classic recipe fit our lifestyle. Especially when I end up making the dish better and healthier. As always I hope all is well with you and then SK clan. Be well my friend.
Well said!!!
Wow! I had never thought to do this! Great job 👏🏼
Looks good can’t wait to try!! Thank you
This is WONDERFUL !
THANK YOU !!
This looks good. Looking forward to doing this.
Steve, Thanks for posting this super simple dressing. To mine, I add juice from 1/2 a lemon, the zest, and more coarse ground pepper. Whisk a bit extra to get thicker from the lemon juice. Delish.
Sounds great!

I make my own blue cheese dressing with whole fat buttermilk, sour cream, onion powder, garlic powder, salt, pepper and of course blue cheese. It's sooo delicious. Better than any store bought. I'll have to try your recipe with the heavy cream.
Love the black garlic idea! Going to make that for supper tomorrow night and I can't wait 😄
Thanks so much fir this dressing… I’ve stopped buying store dressing for the same reasons you stated plus Jacques is the best and it’s soooo simple!
