Every now and then he let's loose with an extremely precise description of a flavor that reminds you he's an actual sommelier. Watermelon but towards the end with a little white rind. Instanly knew exactly what that tastes like.

You just know that what Spittoon imbibes doesn't go to waste.
This stuff is bottled(or canned) through an in line blending system. You have a tote of concentrated essence full of dye, and input a recipe on a computer that adds HFCS, malt, citric acid, potassium citrate, DI water, and also c02. Then sent through filters to a filler.

I believe most hard seltzer use fermented alcohol to make it cheaper. When they say vodka and seltzer they may be wanting to distinguish that they aren't trying to cut corners. The higher ABV alcohol also leaves more room for them to use for flavor. The high abv liquor would also remove any off flavors from fermented alcohol.
