Thanks for the vid. I wasn’t sure I had the skill to be able to do this but after watching and trying on my own I developed my own technique and had the hang of it after a few minutes. I have a doctorate in pharmacy but when it comes to home improvement it always seems like rocket science.

The other way to deal with extra wide gap is to change the angle of the caulking gun to where it's (perpendicular) to the wall, or pointing straight at it (and downward, like always). Doesn't require a second pass

I hate quarter rounds so much. I have no real reason to hate them, but I don't like them at all.
It is a pain when you finish all the baseboard install.. then start back at the beginning to lay quarter round.

Good question! There is a cosmetic aspect of it but the second big reason is for cleaning. If not caulked the gap on the top allows for dust, dirt, and pet/people hair to collect between the baseboard and the drywall. This can increase allergies and be a nice food supply and home for bugs/pests. We have demoed plenty of homes which did not caulk the top of the baseboards and we find everything from huge hair balls, coins, and dirt filling the cavity between the board and the drywall.

When the wall has a bow to it there is no amount of nailing that will fix it. If you did use a large enough nail that would do that then it would look even worse.
