Literally translated from Malay, ayam goreng berempah means ‘spiced fried chicken’. Infused with a mix of herbs and spices, this fried chicken dish is incredibly crunchy, juicy and accompanied with heaps of crispy addictive crumbs.
Every country has its own style of fried chicken. Malaysian's version is referred to as ‘ayam goreng berempah’. This fried chicken goes well with nasi lemak but tastes just as good as it is. Besides the crispiness and extremely tender meat, it also has lots of crunchy crumbs that makes this Malay-style fried chicken so special. I often request the stall owner to scoop more crumbs onto my plate because they taste amazingly great with steamed white rice. These crumbs are actually the marinade which is a mix of local spices such as turmeric, lemon grass, cumin and more. The addition of curry leaves when frying the chicken meat makes it even more fragrant.
A classic dish like fried chicken seems simple to prepare. However, you'll need a few tricks up your sleeve to get the best results. Of course, I am specifically referring to ayam goreng berempah because of the very addictive crumbs which are quite delicate and need some attention.

You didn't seem to marinade it for long when normally it should be marinated overnight?
In this recipe, you can marinade the chicken for 30 minute but of course, on the website we also suggested to marinate the dish overnight to make it tastier. :D
Love crispy chicken skin
Thanks Nyonya
Welcome! Do give the recipe a try!
Do you think that I can bbq the chicken instead of frying?
Grace, I suggest you get a kitchen thermometer to get a precise reading of the oil. Lovely recipe, can't wait to try it out!
We have one but I'd prefer not to use it in the recipes because many do not own one :D
A bit different from nenek sambal chicken. Less spices no flour.
I just made it today and it was very good and delicious 😋 I use all the ingredients that I have just missing some items but still so good and yummy 😋

What is yr advice if i use airfryer to fry the chic.
You can definitely do it. That should take no longer than 30 minutes. I've just updated the recipe with a section regarding air fryer ;)
@@nyonyacooking thank you 😉
@@nyonyacooking Thanks! My air fryer is my favourite cooker.
Love ur Chanel and recipe. Very easy to follow. I think I would like to marinate the chicken over night if that is possible.
Sure! We actually recommended it on the site. You can refer to all the tips there www.nyonyacooking.com/recipes/ayam-goreng-berempah~KqxUD95ec
This is similar to indonesian fried chicken
Yes, very similar
I want to let you into a little secret.. If you went out and bought an Indian grinder there is no need to go through all this soaking and silly stuff. I'm not talking about the stone wheel ones but the versions that look like blenders. I'm telling you right now the country that has the most diverse food on the planet also know a thing or two... It would save you time when you can add seeds whole spices liquid and roots all into one and you get a very smooth paste in seconds
Garth Haha! That's funny. ;) Here's our little secret. Soaking doesn't only soften the chillies but it a part of the process we do to reduce the spiciness. You can check out our tips here: www.nyonyacooking.com/ingredients/chilli-peppers-dried~ByUlUDswzcZX Of course, if the chillies you bought are of the preferred level of spiciness, you can just blend it as it is ☺️ Happy cooking, Garth!
Now I want to let you in on another secret, if you knew how traditional Malay ayam goreng is made, you'd know that Grace's recipe is perfect the way it is. Nothing "silly". You may know a thing or two about Indian cuisine, but sir let Malaysian food shine the way it is. The different texture of the spices result in crunchy and crispy pieces left after frying the chicken. If the paste is too smooth, the chicken will be coated too evenly and you won't be left with as tasty crispy bits. That, in my opinion, is the charm of the dish.

Very good recipe! Thank you!
