    any south indian will agree that
    for idli's, first thing is to soak urad dal and rice separately and grind them separately,
    because the texture of rice and dal are different, if you mix and grind, the consistency would not be right.
    most important thing this factory did wrong is by adding the unhealthy soda.
    most of the genuine restaurants allow the batter to ferment naturally without any yeast or soda.
    and i know restaurants serving nearly 1300 idlis in the morning hours.
    they are not greedy to make just money by making more batter, they just close when they run out.
    i bet this is a very bad recepie to make idli atleast and very bad way to even cook the idli moulds with a plastic layer going into the steamer. (plastic when heated is carcinogenic, causes cancer)
    i would rate a zero for it's idly and -ve in terms of health

      @@stagss Yes, I always do it old school. Most families mix together to save time. It's all right. I have been following what my parents and gran parents follow. But when it comes to restaurant or very fluffy batter, grinding it separately fuses more air to the urad dal mix than rice.

      @@stagss your wife might be graduated from kindergarden. What @mahalakshmi says is correct. Urad dal batter should be grinded very nice and rice with coarse. Taste both and feel the difference.

    Soda should not be added to idli dough. The dough should be fermented overnight for getting fluffy idlis with a touch of sourness.

    I have been making idlis for the last 55 yrs, . never have I soaked both dal and rice together. Also fermentation process is very important. I cook idlis without soda, still they are soft. Soft idlis are the outcome of maky dal fluffy and mixing rice batter with salt. Once fermentation is good enough don't mix it thoroughly but fold the batter as in the case of cake.. The reason is not to allow the air accumulation disperse. These idlis are perfect soft and don't lose their food Value.

    appreciate your hardwork. Also better if Hygiene is maintained. batter is mixed by hands without gloves ... plastic usage while baking ... n finally you can keep the rice washed water for plants or animals.. around...

      Before coming to grind batter everyone who is doing this first wash their hands then only they touch that. People who are in this field treat this as holy thing and start their work by praying God n move to further work.

    Pls dont mind but try to improve. Jewelleries should not touch the food at any time because it carries a lot of germs which can make someone sick. Chefs should not wear them when at work including rings, watches, bands which easily contaminates the food

      That cloth is called muslin.. it's also called cheese cloth. Idlis will not get steamed if plastic is used as the holes get blocked.

    There is very big health-risk/mistake in this process .. usually white cotton cloth is used in idly tray ... But these guys and many others also in bangalore area use plastic papers in the idly trays... During cooking process the plastics are heated to over 100 degree Celsius so melts and get mixed to idlies as well ...plastic is very dangerous to health..The only reason why many people use plastic papers instead of cotton cloths is because everytime they need to wash/rinse the cloths ..but with plastic its easy... But big health risks are there with consuming plastics ... take care of your health people ..

    1) Using the plastic sheet in idly tray is banned I think. This plastic sheet releases toxins during the steaming process, and creates severe damage to the human health.
    2) Process is correct. But the soda mix is harmful, which will ruin the apetite forever, if these idlys are consumed over a period of time.
    3) Again, paking the hot idlys in the plastic cover is not at all good.
    I don't know what happened to the ban on single use plastics. I can still see all of them in the markets.. almost all shops.
    The plastics when heated at high temperatures releases high toxins, which will ruin the health forever - some study says so.
    I don't know if the health department is noticing this...
    Beware of such practices my dear friends.

    Pl avoid plastic sheets, in place use banana leaves or light cotton cloth which helps health safety as well as environment friendly. U can say it is expensive, instead of spoiling public's health n use light cotton cloth to avoid use of plastic.

    I stopped eating Idlis from these Idli factory/Hotels after seeing this video. Hope many also stopped.. See the way stupid puts his hands inside the mix..can't he use a vessel with a handle ? Secondly, he should use vessels synonymous with kitchenware rather than with bathroom/Toiletware !

    use cloth instead plastic sheet, soda upsets stomach for some/ few, in the long run, health issues will occur.
    not soaking rice for 6 hrs to 8 hrs, no fermentation process for 8hrs, soda is dangerous.

    The problem with all the Indian food- makers and caterers is that they adopt the policy of "minimal infrastructure, maximum profit".
    The first casualty is hygiene. So we find dirty surroundings, dirty clothes, sweaty bodies, dirty surroundings, use of bare hands, foodstuff in contact with body.
    The second casualty is the workers who are victimized by "less pay, more work".

    9-21-2021 remove that ugly ring through it away in the garbage. You should know when to wear and when not to wear when a person mixing batter cooking food to sell in public.     Batter both rice and ulundu , add salt by machine or karandi. Hand and plastic sheet is not hygenic.

    This idly is unhealthy. In our house, we will use cotton white clothes on idly plates. You can also switch over

    Poha should not be mixed when washing...otherwise it will just wither away with the water also the rice and dal should be separatly soaked.

      Yes you are correct fermentation make food light to digest thus healthy where as adding soda is just making money in wrong way

    Salt and soda thay mix. Salt good but soda not good .he grind immediate he cook but idly comes well its not good i think conformly test that mixture of salt and soda what he mix before cook . Its chemical mix irukalam nu thonuthu.
