I'm late but I also love this plan
So excited to see that you're doing this! As someone who only came to Adventure Time recently (and as an adult), I'm very much in agreement that the show can be hit or miss, partly because it's just so sprawling that individual characters and plot threads can go for entire seasons without being revisited, and your mileage will vary a ton depending on how you feel about the focus character/plot for a particular episode.
But taken as a whole, Adventure Time is IMO one of the most amazing works of animation created in the past few decades, a ludicrously and endlessly creative show that somehow builds an incredibly rich world piece by piece without any apparent overarching plan for it all. It's a unique, ambitious, and frankly bizarre approach to long-form storytelling that I've rarely seen attempted, and certainly never seen executed this well in any other series. Like a Katamari of story that ends up forming a beautiful gem made up of toothpicks, rocks, pieces of gum, dead worms, and blades of grass.
I think the way you're proposing to do your reactions sounds wonderful, especially since there are actually relatively few reactions out there to the later seasons of the show (and Fionna + Cake). It's just such a huge series that relatively few reactors take the plunge, and those who do often peter out before they get to the really good stuff in the later seasons. I think doing a quick rewatch of the highlights from the early seasons, followed by a deeper dive into the episodes new to you in later seasons, is a great way to go about it. (Also, BIG thumbs up to the idea doing full reactions to the three miniseries, as they're all fantastic.)

The Vault was an episode I must have seen but didn't remember until my recent watch through. It was incredible!
