I made one of these 50 years ago, but had forgotten about it. After watching this, may have to do it again.

Amazing that someone can create such a recipe with what seems like a 100 different steps/techniques.

I made Paris-Brest a few years ago with a friend. I'm not a professional baker, so with all the stirring, beating, and whipping it was nice to trade off with him to give my arm a rest now and then. We made two complete Paris-Brest at the same time. This is an absolutely delicious dessert.

French desserts, absolutely perfect in every way. Just the right amount of sweetness balanced with pastry, butter, cream. They look amazing, taste amazing and are a complete pain in the butt to make :D (worth it, but you will curse a couple of times lol)

I know it wouldn't look as spectacular, but couldn't this be done as eclairs? I think I'm going to try that.

That's exactly how I would make it. But then yes it's just eclairs.
This is a great center piece though...

It’s the same dough so yes. You could even do it as profiteroles or make the filling as an ice cream since the custard part of the filling mix reminds me of creme anglaise.

IMPORTANT NOTE: The recipe is hidden behind a PAY WALL and it's gonna cost you $50 to read. Unfair marketing. There are plenty of other Paris Brest videos available on CZcams that include the recipe.
