Technically, his official name is Professor Zoom. “Reverse-Flash” is just a title to every archenemy of the Flash, there’s also The Rival, Inertia and one who is just Zoom. Thawne going by Reverse-Flash was just in the CW show.

In the research blog Q&A on this battle they said that even if Infinite Zamasu was included (essentially doing the same thing that you described), Reverse Flash can nuke entire timelines like Zeno.
