Kimchi is good in literally almost everything. Kimchi grilled cheese, noodles, rice, soup whatever you want. I like eating it straight out of the jar as a lil depressy snack.

Emily, I have that sleepy time tea and same bottle of melatonin. Yes they are good but honestly Tazo Dream tea is the absolute best. My teen is autistic and has trouble sleeping and his doctor recommended it. It’s wonderful.

cucumber salad with kimchi is my favorite snack! it’s super easy to make it’s just cut up english/japanese cucumber with soy sauce, sesame oil, vinegar and kimchi.
Pro tip on the broccoli: a lid on the pot will help cook the broc all the way through!

A fun kimchi meal that even the nonvegans enjoy is kimchi tacos! I use black beans (you can season with brown sugar, garlic, ginger powder, red pepper flakes and soy sauce if you wish but absolutely not necessary) and some kimchi tossed with a little vegan mayo and a ton of lime. I usually lightly fry my corn tortillas but up to you how you like them. Then top with some radishes. I also sometimes bulk up the kimchi with fresh cabbage if I'm worried about having enough for a bunch of people.

I agree with the chocolate/coffee thing!! I use a chocolate superfood powder that basically tastes like healthy hot chocolate and I mix it into my medium roast coffee every day and it is ✨god tier✨

i definitely recommend going to an asian market for kimchi, it’s very hot or miss with regular grocery brands (side note: your channel has helped me be better about not making meals because i don’t have every single ingredient and i feel like i waste and spend less!)

emily try kimchi jjigae! basically kimchi soup and the broth base is kimchi and gochujang. you can add whatever vegetables, protein, etc in it and serve with rice. really easy and tasty and one of my current favorites!

Non washed lettuce -Need to put a folded wet paper towel on the bottom of the lettuce and put it in a non sealed plastic bag in fridge.
Washed - Leave it on the counter for a few hours to dry before tupperware. Also lettuce does not like to be squished together after washing.

a way to keep lettuces good after cutting is to leave them in containers in the fridge uncovered except for a wet tea towel on top. moisture keeps them crisp if its a big batch you want to keep 2-3 days

Hey you should use that chocolate sauce to decorate the walls of the glass/jar you’re drinking from! It usually comes off by the time I finish the coffee so it’s not a big hassle to wash out, and it makes it seem more fancy 😚 anyway this is my first video of yours I’m watching and I love you already! I was vegetarian for almost 10 years, I had to change my diet because I’m just so damn anemic unfortunately but I still make a lot of veggie swaps! Thanks for all the food ideas 🥰
My favorite ways to use kimchi are in soups/ramen or in a grilled cheese/quesadilla (just goes great with vegan cheese/carbs).

Make kimchi pancakes!! Or kimchi fried rice!! You can use literally a basic pancake recipe and just make it a savory moment (add green onion too, top with ketchup and cheese). And the fried rice is a great way to use up leftover rice and veggies that are on their last leg.
Hello there! Fellow Clovite here (well, at least I grew up there and my parents still live there but I live in Colorado). Love your videos! I have never heard of wrapping lettuce in foil but my tried and true method is wrapping it in a clean dish towel and then putting that in a plastic bag.

Okay, for the Kimchi: I know it's pretty basic but I'm currently obsessed with just Bibimbap (idk if you're familiar with it), its basically just rice with toppings and I always roast my kimchi in a pan for a few minutes and add it on there. I always make it with some in soy sauce roasted Mushrooms & Tofu with sesame, and also with this korean spinach side dish (Sigeumchi-namul), which is just fresh spinach roasted in a pan with sesame oil, soy sauce and some roasted sesame, and it's SO addicting!!
Also: I LOVE adding Kimchi to Ramen (or Ramyun haha), I usually use the Shin Kimchi Ramyun, but I'm not sure if this is vegan.
Oh, and also: Kimchi Jjigae (Kimchi Stew) is SO good, but I think you really have to like Kimchi for this one haha.
Honestly, you can habe kimchi with everything, its just so gooood!! But I really recommend roasting it in a pan, I think it makes it taste even better (especially those store-bought kimchis)!!

Kimchi is so good in onigiri! But I'm really bad at shaping them so I usually just mix the kimchi with my sushi rice and eat it with nori. I also like to put some in my instant ramen and it immediately becomes 10 times better. But I never tried store bought kimchi, it is so cheap and easy to make it yourself, you already have gochujang so maybe you should give it a try!

You can treat kimchi how you treat pickled onions! Add it on top any dish you want that sour acidity! Like a stir fry rice, tofu, Asian inspired dishes

I believe the thing with rice is it just cooked rice grows bacteria easily at room temperature. As long as you put letftovers in the fridge within 2 hours or less you should be okay (ideally within 1 hour). Really that is with any cooked or cut food, but I do know rice is prone to that. But again as long as you are keeping cooked food either under 41°F or over 165°F - it's safe, and then no more than 1 to 2 hours at room temp because room temp is within the Danger Zone aka between those two temperatures.
Rice has been a staple for me for many years and as long as you are following food safety guidelines you should be okay.
I love kimchi in either ramen or with rice and sauteed broccoli (served w soy sauce). When I'm feeling depresso and can't like cook a whole meal but crave kimchi, I just put it on toast. Trying to get motivation to cook again through watching your videos. Haven't cooked much since my bad breakup like 7mo ago and I am trying to get back into the swing of things. I cooked rice for the first time a couple days ago. Have just been getting frozen meals and had instant ramen for lunch at work for like every day 5mo straight. I like watching you eat real meals and it's close to what I used to eat like. Trying to eat like this againnn.

How long do roast your chickpeas? I've tried and they turned out so bad 😅
i would say just check on them every once in a while & taste one until u like it! if ur using canned, every can is also diff like some cans the chickpeas are super hard & others theyre soft. i think i only did like 10 min but i brought the baking sheet up to like 430 F before adding everything to it which speeds the process up! i probably shouldnt say “roasted” because im rly just baking them lol but anyway

i tried to store carrots in a jar once and they straight up fermented, they were only in there for like a month i think (it was definitely a way shorter amount of time than i regularly keep carrots just as is) it sounded like i cracked open a can of soda when i opened it and they were slimy as hell no idea what i did wrong
i probably shouldve said in the video that u need to change the water every once in a while 😬😭 it says online to change every 4-5 days i have definitely done it more like every 6-7 days & its fine but…. there might be other factors but thats def one lol

Emily's what I eat in a day video's are more realistic and well balanced between a vegan Wfpb diet and a vegan processed junk foods diet because I don't think a diet that is vegan Wfpb is balanced but neither is a vegan processed junk foods diet so I have a combination of both. Love 🥰 the video and love 💕Emily.
