It only gets worse. Tolkien somehow didn't seem to grasp the connection between females and reproduction. For example, the first Dwarves were the seven Fathers of the Dwarves, all of whom were of course male. So, did Aule and Eru create female Dwarves off-page or what?
Keep in mind the story tolkien wrote down is not from an omnipotent or even scientific perspective it was written from a mythological and cultural perspective meaning if the female dwarves were not mentioned outright and the dwarves were known to be secretive and protective of the woman in their families and species it makes sense that they are not mentioned in their mythology at least not to outsiders like Bilbo and Frodo who are the canonical authors of The Hobbit and The Lord Of The Rings.
There are no dwarf women everone knows tgey just spring out of holes in the ground
"Which is of course, ridiculous --"
"That was deliberate!!"
That was when they were created in the simarilion
Tolkien: hmm, a female dwarf should be included, to have some diversity. What shall I name dis female dwarf.
Aha! Dís, what a wonderful name!

My head canon is that just half the dwarves we hear about or see are women, but we (and they too) don't know it

I think they were just the first to awake, not the only ones, so dwarf women awoke after them
Yes, Im sure it was because Tolkien didnt grasp the concept. Not because its a relatively useless piece of information.

You can think of the seven as the pre-ordered dlc pack that comes along with first edition

No they are just female dwarves created by J.R.R Tolkien into his imaginary fantasy world.
