Here's a recipe for jarred sauerkraut strips, from which you can quickly make a tangy cabbage salad or who knows, maybe a braised cabbage with smoked meat.

Ingredients for jarred sauerkraut strips:
- 8 kg of cabbage;
- 25-30 g of non-iodized salt per 1 kg of cabbage;
- 1 tablespoon of whole peppercorns;
- a horseradish root;
- slices of apple;
- slices of quince;
After cutting into strips and adding salt and pepper, let it air out for 2-4 hours. Then squeeze out some of the liquid and put it in a jar, pressing the cabbage well to avoid air gaps. Store in a cool and dark place. It can be consumed after a few days.
