In the episode where they go inside her memories, we see him eating her fries, in an apocalyptic landscape, so that must be during that time. From the "Betty" episode we also know Simon (and Betty) were studying magic and ancient mysteries, so he must've known or discovered the spell to summon Hunson Abadeer.
You are right, when Hudson comes back we a flashback with young Marcy again wearing the same clothes she had when Simon left and see that Hudson was bright to the world by Simon
