免炸版糖醋豬排骨/Sweet Sour Pork Ribs

    豬排骨
    佐料:
    煮排骨用的:蔥,薑,花椒,香葉,大料,鹽
    炒排骨用的:糖,香醋, 生抽, 白或黑胡椒粉
    以上食材和佐料根據自己口味調整用量
    製作過程:
    排骨切塊兒洗淨
    排骨放冷水裡煮開後,把煮排骨的水丟掉,再用水沖洗排骨
    排骨放入鍋中加入一盒雞湯和水淹過排骨後,加入蔥,薑,花椒,大料,香葉,鹽
    大火燒開後轉小火煮30-40分鐘
    鍋中放入少許油後加入4湯匙白糖,將糖炒至融化至深黃色,不要炒成紅色
    取約500克煮熟的排骨倒入鍋中翻炒
    加入4湯匙香醋2湯匙生抽1湯匙米酒
    大火炒至湯汁濃稠後加入1/4茶匙的白或黑胡椒粉
    Ingredients:

    Seasonings:
    Boil ribs: Onion, Ginger, Sichuan pepper corn, Star anise, Bay leave, Salt
    Stir fry ribs: Sugar, Balsamic vinegar, Light soy sauce, either white or black pepper
    Adjust the amount of the above ingredients and seasonings based on your own taste
    Cooking Process:
    1. Cut pork rib into small pieces, rinse it.
    2. Put ribs into cold water, boil it, then rinse ribs again.
    3. Put ribs in a pot, add a box of chicken broth, top it with water
    then, add onion, ginger, Sichuan pepper corn, star anise, bay leave, salt.
    4. Boil it with high heat, then use low heat to cook it for 30-40 mins
    5. Put a little oil in the pot, add 4tbsp of sugar. Melt sugar until dark yellow. Note: do not melt sugar to red.
    6. Add about 500g of cooked ribs into the melted sugar, stir fry it.
    7. Add 4tbsp of balsamic vinegar, 2tbsp of light soy sauce, 1tbsp of rice wine. Stir-fry it using high heat until every piece of rig is wrapped with sweet sour sauce. Add 1/4tsp of white or black pepper.
