    GLUTEN FREE BUTTER COOKIES
    INGREDIENTS:
    Rice flour - 200 gms
    Butter - 100 gms + 100 gms
    Egg - 1 No + 1
    Xanthan Gum - ½ tsp
    Salt - ¼ tsp
    Baking powder - ¼ tsp
    Sugar powder - 100 gms
    Vanilla essence - 1 tsp
    Crushed cashew nuts - 30 gms
    PREPARATION:
    1. In a small mixing bowl take 200 gms rice flour, 100 gms butter, 1 egg, ½ tsp xanthan gum, ¼ tsp salt, ¼ tsp baking powder. Mix gently with a whisk.
    2. In a big mixing bowl take 100 gms butter. Soften butter with a whisk.
    3. In 100 gms sugar powder. Cream butter and sugar with a whisk.
    4. Add 1 egg and cream it again.
    5. Add 1 tsp vanilla essence and whisk.
    6. Add 30 gms crushed cashew nuts and mix it gently in hand.
    7. Now add the rice flour mix gently into this to form a dough.
    8. Once the dough is formed, cling wrap and refrigerate for 30 min.
    9. After 30 min, unwrap the dough and knead it gently. The dough is ready and pliable.
    10. Take a lemon sized dough and press it with the palms as shown in the video. Place the dough in a lined baking tray . Press the shaped dough with a fork to flatten and design the cookie as shown.
    11. Bake at 150oc for 20 min.
    VERY TASTY, CRISPY GLUTEN FREE BUTTER COOKIES ARE READY.
