This reminds me of a dish that emerged from a Turkish snackbar in my country (Holland), called a “kapsalon.” It’s fries, shawarma (or rather, döner kebab) on top, cheese on top, then set in the oven for a few minutes to let the cheese melt. Then it’s topped with salad and sauces.
