Japanese Cucumber Salad June 12, 2023

- 3 mini Persian cucumbers, sliced (about 3 cups) or 1 english cucumber
2 tbsp low sodium soy sauce
2 tbsp rice vinegar
1 tsp sesame oil
1 tsp light brown sugar, or more if you like it sweeter
1 clove garlic, minced
1/4 tsp crushed red pepper flakes, or more if you like it spicy
sesame seeds
Combine soy sauce, rice vinegar, sesame oil, sugar, garlic and crushed red pepper flakes in a small bowl. Whisk to combine well.
Pour asian dressing on to the cucumbers and toss to combine.
Serve with extra crushed red pepper flakes on top and sesame seeds for garnish!

That looks really good. I always make cucumber salad with Persian cucumbers and strips of red onion in vinegar, sugar, and water. But this looks so good. I'm definitely going to try it. Just a suggestion, if someone needs to avoid the brown sugar, you can use Mirin, which is a Japanese rice wine that is sweet. Can taste a few drops to decide how much to use. I'm making this today! Thx.

I love English cucumbers. That’s all I buy. Simply because you don’t have to peel them. They taste better also. I like to eat them with red wine vinegar.

Hi Sara. Did you know most farmers wax the skin of cucumbers at the growing or plucking stage? This wax coating protects cucumber from insects and also minimize the risk of damage while shipping. The bad part of this step is that the wax used for coating is made up of compounds like ethyl alcohol and soaps.
english cucumbers which she said she was using usually come wrapped in plastic wrap to avoid the wax step.

I love an acidic cucumber salad with barbecue. It pairs really well with rich, fatty meat. I'm going to try this with some sticky sesame pork ribs.

Have you ever tried sea cucumbers Sara? If not, you should check them out. There are different types of sea cucumbers, so you need to look for the type Apodida. They all have different textures too which I'm sure you will find more satisfying.
