    Ok I already know what y'all are thinking, but get that thought right out of your head! You've got to trust me on this one! This is a perfect summer treat that you can make any way you want it. No need to buy a gallon of ice cream that only 1 or 2 people like when you can make exactly what everybody wants! And it's loaded with protein and much healthier than regular ice cream!

    Recipe Base:
    15 oz full fat cottage cheese
    1/4 cup of honey or maple syrup (or sweetener of choice)
    1 tsp vanilla
    Add ins of your choice
    I made strawberry cheesecake: strawberries, graham crackers
    I made pecan praline: pecans, caramel syrup
    I made Oreo: Oreo cookies
    Mix the cottage cheese, sweetener, vanilla and a little of whatever your add in will be. Once it's all blended up, stir in chunks of the add ins. Freeze, covered for about 1 1/2 hours or until it's the consistency of ice cream. I covered mine with plastic wrap to help keep ice crystals from forming. I've also heard that stirring every 30 mins helps, but I haven't tried that one yet!

    For mint chip I highly recommend using peppermint extract and then a tiny, tiny amount of mint (mix of peppermint and spearmint). So for a quart of ice cream I use 1½ tsp peppermint extract, 3 drops mint extract, and ¼ tsp vanilla extract. You also need a dash of salt. It's the best mint chip ice cream I've had--if I do say so myself--beside Thrifty Drugstore's which is made by Carnation. Y'all in California probably know about that. Thrifty's was so good that my momma would freeze it in dry ice to take it to her grandpa in Florida. I think they still have it at Rite Aid.

    The key to good cottage cheese ice cream depends on three things: (1) the fat content, (2) the ingredients to flavor, (3) the smoothness.
    (1) the fat content: you are making a lower calorie, high protein ice cream. Easily low carb if you use a low/zero calorie sweetener. Protein by itself has very, very little flavor (with the notable exception of the amino acid glutamate which is what triggers the taste buds on our tongue for umami/savory - otherwise protein basically just provides structure to the food.) You need flavor. The secret? Heavy cream powder - a great pantry item. Get that fat content up. Higher fat will help with the texture, allow the flavors to stay on your tongue longer, and just provide an overall better experience. Use allulose/whatever to sweeten it and use those free calories to add more fat to it. That is probably the most common mistake people do when making cottage cheese ice cream.
    (2) Use what you want. Just understand that you will have to make it taste stronger than you like it so it will taste correctly when it is really cold. Cold will mute the flavors.
    (3) I think most people will just leave it out so it can defrost to the consistency of soft serve. In that case, I think getting some 8-ounce mason jars work really well as you can pull out individual servings as you need them. Otherwise, you have to delve into the emulsifier world so you can bind the water to prevent large ice crystal disrupting the overall texture. It's a personal choice which route you want to go down. Of course blending it very smooth is important too.
    Oh. Lastly, a lot of companies that make cottage cheese are now selling pre-whipped cottage cheese for recipes just like this. So if you don't have access to a full kitchen or you would rather have the convenience, it is available to buy now.

    This cottage cheese ice cream recipe sounds delicious. I'm a type 2 diabetic and I've given up eating ice cream altogether. But after watching this video I seriously am going to give this a try because it looks so good. Thanks for posting it and giving the ingredient listings in the video.

      I bought a mini Cuisinart processor and it makes ice cream super creamy. I also add vegetable glycerin to keep it soft in the freezer!! (A tip from Trim Healthy Mama..lol)

    I saw this on Wes HiFalouting Keto trials channel. I'm on a 1200 calorie diet. I've lost 131 pounds so far. Getting the tings needed for plain chocolate, which was one he made. I can surely eat this faux ice craem rather than the calories from the real kind.

      Just use the cottage cheese, honey, vanilla and then add banana. I would blend the banana. Not sure I’d add chunks 😁

    Hum… I am on weight watchers. I do fat free cottage cheese add a little water with a tablespoon of sugar free pudding mix . I then cut up what fruit I want in it. I don’t blend my fruit. The cheesecake, vanilla, banana cream is delicious treat. And it’s only 1 point for me. Taste just like pudding and fruit

    I used a different recipe to the letter but it was too salty tasting, I added No salt,any suggestions? It was made with cottage cheese too

      I haven’t found mine to taste salty, but you might could try rinsing the cottage cheese before you blend it and see if that helps🙂

      Hi! They are a kind of sweet cracker. It’s what we use for the crust of a cheesecake. From what google tells me, a digestive biscuit in the UK is kind of similar to a graham cracker😁

      For me it wasn’t so much the benefits of the cottage cheese itself, but more about having something less fattening that still tastes good. Just an alternative to ice cream🙂

      Hi! I didn’t use sugar in this. I only used honey. However, I did make it another time using stevia and it turned out great! For this amount of cottage cheese, I used 2 tbsps😁😁

      @@2okaycola no honey is still 40% fructose, and 30% glucose and the rest water.. still has a 58 on the glycemic level,.., .. our bodies don’t know the difference .. sugar is sugar …..it’s awful for anyone auto immune or just metabolically unhealthy like diabetes..

      You can use other sweeteners besides honey…maple syrup, real sugar, artificial sweeteners. Any of those would also work🙂

      Allulose works really well in ice cream. I mix it with sucralose because I can handle it but not too much of it. Monkfruit does well with fruit flavors.

      I am doing Keto. You can eat real Honey. If its REAL honey. In small dose its good for you. It was used as a remedy for the longest time.
      I lost 25lbs in 3 week going carnivore. I had a table spoon of honey once a week. So honey IS healthy.

      you can make your cottage cheese using lemon juice instead of vinagar ..il is very simple ..use the whey in order to make bread or any pastry as a substitute for any liquid requiered in the recipe .
