One thing I don't see many people doing when making this ice cream is to add vanilla extract. Vanilla takes out any salty taste from the cottage cheese and adds a richness to whatever flavor you're using, even chocolate. Also, if you're doing keto do not use honey, it spikes insulin. Use stevia.
She said that she used Choczero sugar-free honey. It's also in the recipe that she linked under video. She knows not to use sugary regular honey.
I use monk fruit, splash of vanilla, ... tried differnt flavorings and found one of my faves is using flavored water enhancer PurAgua, (no carbs no sugar) in flavors: strawberry pineapple, strawberry watermelon and orange tangerine... my grandaughtered said it tastes like frozen yogurt ... yes!

Beaver castoreum (the goo-like vanilla-scented secretion that comes from beavers’ castor sacs, located, yes, in close proximity to their anal glands) has been used as a food additive for much of the last century. It’s recognized as safe by the FDA and could, in theory, sneak onto ingredients lists under the label of “natural flavorings. ” But the truth is you’re actually not likely to encounter it in your desserts. Global production is extremely limited, and it’s more commonly found in perfumes and cosmetics. When it comes to your average supermarket purchases, there’s no need to fret: Nearly all vanilla extracts are vegan-even the imitation ones.
I've made this cottage cheese ice cream (not honey, but Swerve for sweetening) and added about 1 tsp vanilla. Tasted great! However, once in the freezer, it formed ice crystals. The next batch I added about a tablespoon of vodka and -- presto! No ice crystals.
I've heard that using allulose or liquid allulose prevents freezing too. Also wrapping the cottage cheese in cheesecloth and squeezing out the excess moisture prevents freezing and makes it even creamier.

For those of you who are from Detroit area. Do you remember this recipe from 40 years ago with medical weight loss centers. We used cottage cheese for everything! It's makes everything creamy. Sauces, ice cream, chz cake etc.

I made a similar cottage cheese ice cream recipe today which turned out great, but I'm super excited to get YOUR version. Every recipe of yours that I've made so far has been so delicious🥰 I added some hazelnut spread into the mix. Yum!

OOoooooohhhhhh, that sounds SO GOOD!!! I'll have to try that, but putting the Nutella on top so it's just a dollop on my portion. Can't really have the refined sugars in it, but that stuff is nectar!

@@zjzj6800 I just make it to taste (add some stevia) I mix about 1/2 cup cottage cheese, a handful of frozen berries (probably 1/4 cup) and a splash of milk into the same type of blender she was using. Instead of freezing it I eat it like a smoothie. It’s already cold because of the berries. 😊

Choczero sugar free honey ingredients: Non-GMO Resistant Dextrin, Water, Natural Honey Flavor, Beta Carotene, Monk Fruit Extract, Natural Caramel Color. I would just use the Monk fruit as sweetener.
I only buy honey that's 100%...no other ingredients
isn't dextrin something that spike the insulin a lot? I remember a video of Dr berg about malto dextrin (which has various names) where he said that we should check the labels and avoid it as much as possible

I'll try this with my NuNaturals stevia sweetened cocoa syrup concentrate. 1/2 tsp makes a good sized cup of coffee into sweet mocha, so I'll use 3/4 tsp to start. Yours is my fav cooking channel!

I made did chocolate ice cream with Lilly’s white chocolate chips 😋 i used milk fruit for sweetener and a i put a lil vanilla extract in it. I tasted it is was Bomb!!! It just has to freeze up 🎉

I made ice cream ice cubes from chocolate almond milk, a frozen mushy banana, and some walnuts. Put in the Ninja for a few seconds, then froze. Took out of ice cube tray into plastic bags. I’ll put 3 in a cup and suck/chew on them. Yummy! Made just w the almond milk as well. Easy peasy!

Myra, try this low carb, rich, creamy and easy ice cream, use heavy cream, coconut cream from coconut milk or from shredded coconut you run through the blender with water and then strain and separate in the fridge, just add sweetener powder and flavoring, it will turn into soft serve right in the blender before you even freeze it, high calories from fat to be sure, so you may want to play with the recipe to reduce that a little, but as good as any regular ice cream.

I do something similar but in a ninja creami. It is way better than any store bought ice cream I’ve ever had! 🤤 I like to use protein powders for different flavors. So good.

Looks wonderful. FYI you were using cacao powder not cocoa powder. There's a difference. Cacao is less processed and a better option. 😊
Cacao has more caffeine though. It can make people super jittery.
Mayra, you got me again! I have to try this - and coincidentally, I just bought some cottage cheese a few days ago . . . I would use the appropriate amount of Swerve in place of the honey, as I am avoiding sugar as much as possible (lost about 120 lbs since Sept 12, have about 70 more to lose). As with all the recipes I get from you and other channels, I type it up in an MS Word document, cite your video and website as sources, and include my own modifications. AT this point I have amassed a little keto cookbook of sorts, and I'm always looking to expand it (as I shrink!).

The Friendship brand makes a no salt cottage cheese, I used to buy it all the time for my salads. It's harder to find nowadays for me but I still do occasionally.
For people who can't do dairy there's also where you can take frozen bananas and cocoa blended up
Also I make it with tofu for non dairy/very low carb no sugar works great!!

Tried that two years ago. Ended up being violently ill....turns out that I have a banana allergy I never knew about. I've always hated the fruit, so now I realize my body just can't handle it. Even an old dog like me still has a lot to learn! (I'm 70).

If you've got a regular blender, get a mason type jar. Even an old, sterilized pickle jar. They work beautifully!

Generally additional salt is added to lower/nonfat products to replace the flavor lost from removing fat.

I make homemade cottage cheese all the time, and I do use a lot of salt or it is hella bland but I can do it without salt for this❤
But all commercial ice creams, as well as homemade, call for salt! ALL of them!

Love this. I love cottage cheese but never did ice cream with it. I did heavy whipping cream and the recipe called for vodka. Really. Something about the way it freezes and u had to shake it in a jar for 5 minutes. I felt like it was a workout. I did taste the vodka tho which wa😂s not good. So i wont be making that recipe again. @@britt1784 I've been low carb for decades. I'm working on a great brownie recipe and considered allulose. I read that Canada has it banned due to just not knowing more about it. I'm sticking with my stevia that's awesome and going to add xylitol to my recipe, too. Some won't use xylitol due to it being toxic to dogs which makes me wonder about that too!!!
