    Why do CZcams comments strive to be things no one would ever lack the class to say in public? She is helping you to make a good meal, try saying THANK YOU! Or maybe say nothing at all. Or better yet, you get in front of a camera in your kitchen and teach people how you cook. Then maybe you will see what kind of courage it takes to do this. I wouldn't be able to keep doing it after reading all of these mean comments. I know that some of you are just trying to get a laugh but humor isn't good if it is at the expense of someone else's feelings.

      Thank you, I've had a fill of mean comments tonight! Your comment is great, so supportive. People have no idea how much I work on these recipes so they are simple, inexpensive and easy to copy for their families and friends. I just experimented tonight on a big sirloin tip roast, a super cheap cut to get a very tender recipe. The meanies on YT have no idea how much trouble I go to in order to figure out an easy, inexpensive way to make super great dinners, like the very best in the world, that's why I'm so excited filming, I have figured something out!!

      I would like to see all of these critics make videos of their own! They are so rude and judgemental and for some reason they don't seem to understand ho foolish it makes them look. If they think they can do it better then why don't they? You are giving a gift, THANK YOU! My tritip was great & my husband was thrilled. He always BBQs them but the weekend ran out before he got to it & he had been looking forward to having sandwiches with the leftovers this week. You made us both really happy. Very much THANKS!!!

      I do what I call pictorials on a couple websites of our cooks.You are right,its very time consuming and if someone has never done so they just have no idea.I try to make my posts crystal clear with pics so folks who have no clue on cooking can follow along,just match what you have to the pics as you cook,easy peasy!

    Love it! Even though I braise the tri-tip on a cast iron hot skillet first, and use a counter-top convection oven - faster and saves on propane. I am still inspired by this video, thanks for sharing!

    Hi Rebecca, This was my very first time making a Trip Tip, which I was so hesitant on cooking because of all the bad out come, ie dry and over cooked. So of all the CZcams videos I went with yours. I was so easy I could not believe it, Thank you it turned out perfect like you said it would.

    So far your the only woman cook I can watch. Love how ur right to the point and throw in some great info. Like the grain of the meat.. Ive heard to cut against it before but never knew how to tell which way it ran.. I'm just starting to get into sous vide myself.. Ive only cooked three meals so far.. but wow..!!     Thanx for sharing your method for a delicious tri-tip, whether you forgot the olive oil or not (in this case, didn't really need it with the natural fat already there). I have experimented with many various cuts of meat and this method works great! As for the haters and negative critics, especially "ms irritated", I checked out some of their posts and vids and they can't touch you...amazing how those who think they're all that BUT ARE NOT, have the worst to say about others. I think it has something to do with maturity, or lack there of. Keep doing what you do, there's a bunch who appreciate you.

    Ms. Rebecca; Nice to see you not waste the excess fat. In ALL meats, the fat is what gives it the flavor! I might be a little arrogant here, but I have had dinner guests ask me how i get my roasts so tender and flavorful. I tell then I keep the fat on the Roast - it bastes the meat! They are shocked because they have been propagandized to think all fat is "dangerous". Depending on the cut, I will also loosely wrap the roast in tinfoil which keeps the "splatter" in and makes for most excellent gravy - a good tip for cheaper tougher cut of meat. A most excellent video, thanks for posting.

      I made one last night in the Sous Vide at 129F for 6 hours.Perfect pink.Then I did the broiler sear like yours, in my oven with fat cap was 15 minutes total.I didnt trim fat,i will trim like yours next time also.Did get a cup of great lard when I rendered the fat on the 4 lb meat.Have also had great luck cooking in my smoker usually at 235F (200F when cold outside is my machines max so BTDT too) until 129-135F depending on my mood.That slow cook technique makes for a fine tender result.

      That's not blood, it's myoglobin. Blood is drained from beef when it's butchered. Myoglobin carries proteins, protein is good for you. Don't cook it all out!

    Making this tonight, do I leave it in the oven at 200 degrees on broil or does it go to bake and left on the top rack?

      Debbie Rushing It's really weird. If you turn it on Broil at 200, it will go off and on and leave it looking like this! And it will perfectly cook!! It's amazing.

      +Rebecca Brand I saw you burn yourself on your push buttons. What a manufacturer defect! My oven broils at 500 deg. If I turn it down to 200, it's baking. My oven doesn't have a top broiler. If I broil, I have to put the meat under the broiler which is under the oven. Do you think I could leave it under there and turn it down to 200?
