Hussey! This is has become the dish that is my all time best! Made it for the first time today. It was fun and fast! Iâm a Cajun girl from the heart of Cajun country. I stumbled across some Bourbon a hickory smoked Gouda andâŠwellâŠI HAD TO!
I followed the Hungry Husseyâs recipe for the most part for the blackened catfish and grits. I increased the amount of grits since we really like them. I mainly tweaked the grits recipe a little.
Hereâs what I did. I donât measure very much when I cook. The water and grits ratio are accurate.
In a heavy bottom saucepan, I mixed 2 cups of water with Knorr chicken broth granules. I just mix it in and keep tasting until I feel like itâs flavorful enough. I also squeezed the equivalent of 2 garlic cloves of garlic paste into the pot. And stirred to combine.
I put the pot on the Blackstone and brought it to a rolling boil. Once it was boiling, I added 1/2 cup yellow grits (I could only find Bobâs Red Mill yellow grits/polenta at Kroger). Stir for about 30 seconds to combine it well. (You could use regular white grits. It canât be the quick cook. Has to be traditional) Lower heat and cover. You will cook for a total of 20 minutes. Stir often. At the 15 minute mark, I added about 3/4 cup heavy whipping cream to cream the grits and stirred it in well. Youâll notice they are quite thick. I like them a little looser. Cover for the next three minutes. At 18 minutes, turn off the heat and add about 1/2 cup shredded Smoked Gouda and 1/2 cup shredded White Cheddar cheese. Stir constantly. If it thickens past your liking add a little more cream.
I found the Gouda at Albertsonâs. Itâs Bourbon Smoked. Itâs soooo good. At first the smell is a little pungent. Itâs a mix between the normal strong smell of smoked Gouda and the musk of Bourbon. But it put these grits over the top!

@@thehungryhussey we can get cod and haddock very easily, and that is normal the choice at our chip shops. I stay on the coast and can catch mackarel easily, but I'm not a massive fan. But our biggest export is smoked salmon. Some people say it is the best salmon in the world but I'm not a fan of it đ

Take those fillets and cut the center vein out. You lose a little flesh, but it's defiantly worth it.

Consider thisâŠif you put seafood boil seasoning on something (fish, steak, chicken) and then put it on an open fire grill, is it grilled? Or boiled? Blackening is a spice, yes but it is a cooking technique like roasting, saute, or braising. I can put any spice rub on a protein and blacken it but is a deep fried fish filet with âblackeningâ seasoning actually blackened?
The catfish might not have been âblackâ and I know the technique too, they dredge with butter then put the spice on and put in a hot CI pan. Thereâs not much difference in that and whatâs done here. The seasoning is 85% of the technique. Is that fair today?
Honestly, Iâd love to talk to you about this. Especially if I have this totally wrong.

This is not âblackenedâ your griddled sautĂ© looks nice but blackening is done in a dry pan/griddle and the butter(oil) is put on the fish(or other protein) before the seasoning.
Itâs not? Blackened is simply the spices and herbs and when cooked appears blackened.
