CANEDERLI Italian Soft Bread Dumplings / knödel

  • Today we prepare another recipe from the Italian tradition, more precisely from Trentino-Alto Adige and Tyrol.
    Using stale bread, we will cook the CANEDERLI in broth and fried 😋. Perfect for winter but not only.
    Let us know the origin of this dish and give us your advice to improve the recipe.

    My grandparents were from this region too and made great canedoli. They came from the Trentino region of northern Italy, Val de Nor and Val de Sol. They were fiercely Tyrolian, but Italian! To this day, we still make sausage, dry and fresh, sauerkraut and pick mushrooms, fresh and pickled. Grandma would make canedoli with sausage, salami, ham and she said you could use anything you liked. We even have our own family cookbook.

    Learned to make Semmelknödel from my Oma. Still make them today. Almost like yours but without the add-ins of onion, Speck and herbs. I’ve never heard of anyone frying them... think I might need to try that! We mostly at them as a side dish with gravy on top! Thanks for the new ideas 😊

    I grew up in South Tyrol and we had canederli at least once a week. When some were left over from the day before, my mother used to fry them in butter and sprinkle a little bit of sugar on top of it. The combination of fried bread, bacon, and caramelized sugar was just spectacular. God, I miss these times.

    that is an amazig side dish for some meet with sauces.. and i just making this tomorrow pity i didn't see the video a bit earlier otherwise i had make it with those dumplings!!! :) :) have a wonderful year 2020 dear Chef!!!:)

    Thank You Chef, they look scrumptious, but i don't eat pig/pork and i know that pork adds flavour and because Italians are great cooks, what other substitutes did they use that is just as tasty if there are any. Don't worry if there are none, i might use herbs, dried tomatoes and chicken. Have a great day and Thanks.

      My great grandparents were from Tyrol, now northern Italy and they referred to their nationality as Tyrolean. Prior to WWI, this part of Italy belonged to Austria. There is a lot of German influence in their cooking even now though it is now Italy.
