Making Simple Syrup & How to Use it (Homemade Soda, Lemonade and Sweet Drinks)

- Simple Syrup:
1 C. sugar
1 C. water
Combine Equal parts sugar and water on the stovetop over medium-high heat. Stir occasionally and bring to a boil. Immediately lower heat to LOW and simmer for 5 minutes. Turn off heat. Store in sealed jar in fridge.
IF you are flavoring with herbs, cinnamon sticks or spices, add as soon as you lower heat. After 5 minutes of simmering, turn the heat off and allow the add-ins to steep for an addition 5-10 minutes. Strain, and store jar in fridge.
IF you are flavoring with extracts. Stir in after you remove from heat.
Coffee creamer
1 C. Half and Half
1/4 C. flavored simple syrup
Mix together in mason jar and store in fridge
Lemonade
2. T lemon juice
2.T Simple Syrup
8 oz Water
Mix over ice.
Soda
between 2-4 T. flavored Simple Syrup
8 oz carbonated water
stir together over ice

I buy bags of limes and lemons on clearance, juice the whole bag, and mix with a simple syrup in a mason jar and freeze. Because of the acidity, it doesn't freeeze solid and you can scoop out a tablespoon or so and add to water and quickly make homemade lemon or lime aide. It's exactly the same thing as frozen juice mixes without any added chemicals. My daughter loves it and at least I know what's in it

Last summer, I made verbena lemonade for a BBQ and had SO MANY COMPLIMENTS! It was just lemon verbena leaves steeped in simple syrup, lemon slices, water and ice in a big fridge jug. Super refreshing and it tasted fancier than normal lemonade because of the verbena flavour.

I once detoxed off of all added sugars. At the time, it was not uncommon for me to only eat cakes, pies, ice cream in a day with no other foods. I quit sugar for 4 months to reset my body. What struck me most, was what my body did to try to get sugar. I would hallucinate, I was a nightmare to be around, I would crave items that I didn't typically eat but knew it had added sugars. The headaches were no joke. Not to mention I could not eat out and everything I ate had to be from scratch because as you said, in the United States, there is sugar in everything.
I did the same thing, except for 1 year.
My gut was really messed up.
I also had to quit gluten.
And dairy.
Quiting gluten, dairy, AND sugar is
NO SMALL FEAT with buying premade food.
So yes, everything had to be made at home.
While my sugar withdrawl symptoms were not as severe as yours, (I never had hallucinations)
I did notice something else I thought was interesting.
All my sugar cravings disappeared while I was not eating those 3 things.
And the thought of how sick they made me feel kept the mental side of the sugar cravings at bay.
However...
When I finally DID start adding things back into my diet, bcuz my gut is very much healed now,
and the new thing I added was a heavy carbohydrate item,
and even though these items had zero sugar in them, apparently, THAT is my body's trigger to want SUGAR!
Or should I say just ONE of my body's triggers to want sugar!
Bcuz -
Within a few hours of eating that sugar free carb item, I once again wanted to eat cakes, brownies, cookies, coffee with heavily sweetened creamer - just ANYTHING with sugar added!
And it did NOT go away!
And of coarse, that's bcuz the body turns carbs into glucose,
and boom, there's the sugar once again.
So yes, it still happens.
The sugar cravings, that is.
Whenever I'm feeling that BIG sugar craving, I feed my body protein instead.
It does stop the PHYSICAL sugar cravings.
However, growing up and unknowingly eating sugar in everything, has, I think, scarred me for life - mentally.
I think I will always have the mental cravings, because I so very much miss eating those high sugar foods.
I miss them like I miss an old friend!
I CAN stop the physical cravings.
But I can't stop missing how even as a teenager I would so easily mix up a small bowl of cake frosting, and just eat it by the spoonful as a snack.
And probably since I was never overweight, or have diabetes, or any other obvious negative outcome, that's just one more reason that my brain thinks it's ok to eat things like that!
But those days are over.
My gut finally paid the price.
And now I just try to think of brownies as an old friend who moved away...
Oh, and I do allow myself to visit with my friend, the brownie!
But only once a year.
Afterward I just jeep reminding myself my gut health is more important.
Like a frickin' mantra!

@@gardengatesopen wow that's amazing you did that for a whole year that's no small feat you know what could help you with sugar and carb cravings fermented foods if you eat them everyday you will be surprised at the self control you will have in front of temptation like a cookie or cake I now can turn down ice cream for months on end.
@@Msaltares91- I'm so glad you posted this. I'm year one with new digestive issues. I just ordered fermenting supplies and plan to make my first sour kraut this week. I don't want to advance to needing surgery but the pains are real and debilitating. Life changes are going to be necessary. I currently drink sweet tea every day. If fermented foods help me kick that habit, I'll be thrilled.
@@ssmith5127 a little bit of advice when you go to try the fermented food start in very small portions. I also have digestive problems as well and when I started eating them I underestimated the potency of the probiotics in them. Had me going to the bathroom alot lol 😂 especially the sauerkraut. Milk keifer is very good and easy to make and makes me sleep hard. You like sweet tea you will probably like kombucha being it's fermented tea I can't give any advice there because I'm just starting to make it myself but good luck to you.

Thank you Lord Jesus! And you too Jess! I needed this SO bad. I have been addicted to Pepsi my whole life, I'm 42. A few years ago I noticed it was catching up to me so I dropped my consumption from 8 or 10 cans a day to just 2. I have stuck to it strictly for almost 5 years, but now I really want to cut it out completely. I'm drinking alot more tea these days and the last 24pk of Pepsi has lasted a month. Now that you have taught me this 'sacred knowledge' I dont think I will ever buy it again!
On another note, my kids like the occasional chocolate milk and I learned a couple months ago how to make homemade Hershey's syrup to add to our goats milk! Its basically your simple syrup recipe and add cocoa power and a pinch of vanilla. It all seems so easy but this information has been lost in our culture. Thank you so much for ALL that you do. Videos like this are life changing, TRULY life changing!
For the chocolate milk, you can also substitute maple syrup for the sugar...I do this and it's yummy.
During strawberry season I make a strawberry syrup (usually with honey instead of cane sugar) then pour a little over ice and add carbonated water and its amazing on a hot day! So much better than a soda!
Do you still do a 1:1 ratio with the honey and water? A strawberry syrup sounds lovely!
Let me find you the online recipe link for the syrup. It calls for 2 cups sugar but I start with 1/3 cup of honey and add a little at a time until I get the sweetness that I like (which is very mild) The sweetness of the strawberries you use affects this greatly so that's why I start out with so little and keep tweaking the ratio. The sweetness of the strawberries affects this greatly so that's why I start out with less and keep adding. Each time is different. First of all, I don't know how long it's been since you lost your mom, but I am sorry for your loss. There's just nobody like Mama. I miss mine terribly.
Secondly, I don't know why on earth you'd be ashamed of just now learning to cook. I'm a decade behind you at 57, and there are tons of things I haven't learned. I can fix some things, but there are LOTS of things that I wouldn't know where to start to fix. I hand my phone to my twenty-something when it's wonky. I can sew, but there are TONS of technical sewing things that I've never done. I can cook, but there are LOTS of people who know more techniques than I do. I am a beginning woodworker and a beginning gardener, with so much to learn about both. We are all learners, for all of our lives.
I am 70 and I only started to seriously cook for myself 6 months ago, when a condition made it impossible for me to eat many prepared foods. Jess's cooking videos and in particular this new channel have been very helpful, not just for the techniques but also for how encouraging she is. She's a real cheerleader for us beginners.
May be a silly question but do you store this simple syrup on the counter or in frig?
I’m loving all the simple recipes for us beginners! Definitely switching to homemade soda.. please do a ricotta cheese for us, I just learned it and everyone needs that lesson too. I've been making my own simple syrup for decades. I use a 2:1 sugar-to-water ratio and cook over medium-low heat until it comes to a boil. I find that when the sugar is heated slower it tastes sweeter. Also, doubling the sugar really extends the life to months instead of weeks. Our family favorite is a pre-made lemonade. I steep lemon zest in the sugar after it comes to a boil. Once cool, I add lemon juice . It is GREAT in water, especially water that's been carbonated by the SodaStream. It's also great in cocktails. Thanks for the video, I truly enjoy watching and listening to you as you are an awesome storyteller.
My most favorite drink on the planet is Starbucks' Passionfruit Lemonade Tea. I discovered that Walmart carries a chilled passionfruit tea (sans lemonade) and it has sugar in it. It's delicious. I decided to brew my own passionfruit tea and add my own simple syrup. Much cheaper than the $3.60 per 42floz bottle and I control the amt of sugar. In summer I can add Santa Cruz organic pure lemon juice.
I make simple syrup for my bees, but keep intending to make a lavender syrup for us from dried lavender and keep forgetting to do it. Thanks for the motivation with this video to just get it done! I love the hint of lavender in so many things, including lattes, baked goods, and lemonade!
Hey Jess, I wanted to let you know that I love cooking and gardening but for whatever reason I have a hard time bringing the two together. For instance, last year I let a lot of my oranges fall because I was overwhelmed by how many came on at once. Because of this channel I have been inspired to process what I’ve grown and create some beautiful products. This year I’ve canned orange marmalade, frozen peeled oranges, dehydrated oranges and orange peels, made home cleaner with orange peel, and made countless pints of orange juice. I just wanted to say thank you for your hard work and the creativity you put into your videos, they help more than you know.
I make a simple syrup using brewed coffee and keep in the fridge to sweeten my coffee. It keeps the natural coffee flavor, which I like, from being watered down or muted by cream, milk, or ice in iced coffees. Thanks for sharing this Jess!

Dandeliom syrup IS SO GOOD it takes like corn pops!
Please don't hesitate to make this type of content. I worked in food service for decades and had open access to many sugary beverages and I took advantage of that fact. My search for alternate beverages was not the amount of sugar I was consuming but because I'm cheap! In retirement without free available soda I have sought out less expensive alternatives. I have discovered I enjoy Iced Green Tea unsweetened. I also make Iced Raspberry Tea using Torani's raspberry syrup and home brewed black tea I gradually reduced the syrup until I still get a satisfying sweet beverage but consume less of the syrup. (I'm hoping to make my own raspberry syrup this year) My garden will grow double the basil I have in the past for Basil Tea based on Taylor's video. I also discovered that by making Lemon Verbena Tea I can harvest my verbena before it reseeds and takes over my whole property.

The other day i was decanting a gallon of honey into smaller jars. when i got to the bottom i just added hot water and shook it up to make a simple syrup and not waste any of it!

So glad you’re covering this topic. I’m one of those people who just doesn’t drink water - I can but it’s blah - no taste. I loved water as a kid and my parents had a hard time getting me to eat because I filled up on water. The broke me of the habit of drinking water. I would drink milk then eventually stop that in my 20’s. The beverage of choice became tea then I ended up with coffee. Sofas have never been my thing but when the flavour crystals came into fashion several years ago I got hooked. Artificial sweeteners and chemical flavouring plus food colouring - all oh so good for you ….can you hear the sarcasm? I still struggle with drinking water and use the liquid junk knowing I have to make a change. I just find them easier to have in my purse so I can fill my water bottle when I’m on the go. I need to do what you do, but make an intense concentrate so that very little goes a long way, and I can bottle it in a dropper bottle (in a ziplock bag just in case of leakage). I like the pomegranate and blueberry drops so you have inspired me to attempt to try and make my own.

That is the exact same thing I was thinking. Stevia grows so prolific & I have not found the perfect way to process & use it in recipes yet.

Exactly the recipe I need! It is winter but every time after shoveling snow I feel like a sip of coke. Just one big sip. But I grew up on coke sweetened with real sugar and really dislike the corn syrup flavor. This recipe lets me experiment with herbs and dried flowers I collected from my garden last summer and never have to waste money on 90% of the coke I pour down the drain after taking that sip. I recently bought my husband a bubble machine to make his own soda because i wanted to be sure the water is good and we have reverse osmosis. this is great because he was buying the flavoring.
You gave me a great idea for coffee creamer, Jess. I've been trying to come up with one that uses natural flavors, some dried cream that is low or no heat processed, and some sugar or honey or maple of some kind. But the simple syrup with vanilla extract (which I make myself) and some raw cream (finally got a good source of raw milk and cream) will work way better. No more storebought creamers for me!! Whoo-hooo! Thank you...💖
I make violet syrup every year and keep it in the freezer. It’s lovely in some water or soda water or poured over ice cream. A gentle flavour of violets and a beautiful purple colour.
This is so helpful, my children and I do not drink soda at all, but My husband on the other hand can’t seem to shake it. And quite frankly, I don’t think he ever wants to. He has reduced a lot from the time we married. I will give him a little credit. My kids were telling me I have to get him to stop drinking that stuff. I have to remind them sometimes that I am not their fathers boss. Haha I can let him know what I think about something like this or even show him some facts but it is his call what he does in the end.

This is so cool and money saving. Years ago there was a recipe when my boys were growing up, take regular grape juice and add a seltzer for a soda. We never bought sodas . Ginger ale is wonderful with ginger lemons and seltzer and simple,syrup. make simple syrup for lemon juice or grapefruit juice and have a nice beverage. No fructose and thanks

Well, I never thought of making my own simple syrup because I never bought any of it because it didn’t look as if it was a realistic thing so for me, SO that was very interesting especially the fact that you just gave us the simple recipe and we didn’t need to watch the entire Show.
I’ll make orange clove syrup, and cranberry cinnamon syrup for Christmas cocktails!
My sister couldn’t wait for pumpkin spice to hit the store so last fall we made pumpkin spice simple syrup and it was amazing. We also made lavender simple and rose simple which were lovely in both hot and iced coffee

One more reason to long for summertime! But...I do have a husband and friends who enjoy a sweetener in their coffees or hot teas...so I'll be starting to experiment with this soon. I'm already dreaming of using my different mints and other herbs come summer. I am a huge fan of unsweetened iced tea, but every now and then, I do long for a splash of something sweetish. Gosh, I quite literally paused the video to go make some with vanilla extract. For fun I put it in carbonated water, but the plan is for coffee in the morning. It's still pretty good in the water though!! ty great tip!

If you drink a lot of bubbly drinks, a soda stream is definitely the way to go. For around $100, you can make your own bubble water. I've had mine for years and go through phases of using it. One co2 cartridge lasts for quite a long time.
I make simple syrups and use 1 part honey and 1 part water and often add small ginger chunks and cook it for a while. It is so delicious. Then I take out the ginger chunks and roll in sugar and then we have candied ginger too!
I just purchased a soda stream, mainly to make magnesium bicarbonate, but I’m definitely trying this simple syrup!

After Covid and my detox of sugar and caffeine, nothing tastes the same. Although I still drink caffeine and sugar drinks today I am better about what I consume. But after all that I no longer enjoy most things after having Covid and loosing my taste and smell. It’s like it either changed my taste or it exposed commercial foods, because fresh food still tastes amazing.

This video inspired me to try making a sports drink for him. I'm going to try a blueberry syrup, with herbs that will help his anxiety/stomach issues. Going to try chamomile, lemon balm and Lavender.

Great video. I feel like I need to make lavender simple syrup the next time my lavender blooms. I've been making my own simple syrups for years. However, I only just learned how to make golden syrup as a replacement for corn syrup. I had no idea how easy that was and it turned out great. Keeps for months, so I have it available any time I need to use it in a recipe.
