    My grandmother used to buy cases of sweet cherries. She would can them and they were so delicious. She closely guarded them for special occasions. One day I snuck down to her cellar and stole a jar. I thought I was so clever. Imagine my 5 year old disappointnent when they turned out to be baby beets. I found out years later that she hid the cherries behind the beets. As an adult I have grown to love beets.

    I just plunged them into ice water - just like tomatoes - after boiling, and the skin slides off without using a knife except for cutting the ends off. It doesn't cool the beets very much and they are still warm enough when putting in the jars.

    My partner and I just had a discussion about beets. It started off with us talking about olives, he doesn't like them and says they taste like dirt. I said what about beets, beets taste like dirt. He said no they don't. We agreed to disagree. I like beets too but they do taste like dirt. He's got a thing about beans too. Says beans taste like stale bread. I can't blame the boy, he's Bahamian, ain't never had my grannies home canned green beans.

    the mrs. here... THANK YOU!!! you can find pickled beets recipes everywhere, but no plain ol' beets! granny always added a spoon of sugar to each jar, not much, say a tsp to a qt. i love them, but hate beets pickled. thank you so much!!!

    They are so pretty! I’m not really a beet fan either...except pickled or...baby beets, golden and red, roasted and warm and placed on a bed of chilled arugula with goat cheese and walnuts with a sweet vinaigrette...I’m telling you, this is the most delicious salad I’ve EVER had!!
    If you ever see this on a menu somewhere, I really suggest you try it! It’s something special!!

    maybe it's not for everyone, but i just cut off their tops and bottoms, peel them like a potato and toss them in jars. process accordingly. safes on time and water bill. try it, it is much quicker

    The last time I did beets I dried them. I was surprised at how sweet they were. I can see sugar beets could make sugar.

    I now know what I did wrong last year. I boiled my beets to leave long and then canned them. They were ok but kind of tasteless. I'm trying again this year with this new info. Thanks

    My husband loves pickled or just plain beets. I don't. All 3 of our kids loved them in the baby food. I buy him a few jars from Aldi. But I told him I could make him some, he goes please don't out of your way, because if I like them then I'll want more and that's too much. Is it just me or watching them bubble after they come out of the canner mesmerizing?

    I hate beets🤢, my husband loves them. He is stalked right now and if you have not guessed his favorite is pickled. Now I will say this, I have a recipe I do with beets and goat cheese, its good, I like it, but like once a year😜

    When I was a kid, I hated beets! I wouldn't even touch them! They made me sick to look at them! Now, I absolutely love them. We certainly go thru a lot of changes as we go thru life!

    Nothing wrong with a feast of beets. They are good for the blood. We are waiting for the beets to be ready here. Canned, pickled, doesn't matter, we love beets.

    You can use an Instant Pot to cook the beets in steam. It takes minutes, and since you are not using gallons of water, you can lift the inner pot out and put it under cold water.
    Also, was wondering if you ever made beet soup and if so have you ever canned it.
    Got a hoot out of your comment about paying 26cents for those lids, since the last lids I bought were the ForJars, using your discount code, and since I'm in Canada it worked out to 56 cents a lid. But our Federal Gov't says we're not in a recession and things are going well. Still trying to find out who voted for them.

      ​@@MaryWehmeier This may sound condescending, but it depends how many you want to cook. I look it up each time I want to prep beets (or most other foods for that matter). I just google until I find something I can relate to. I do remember I use a spacer in the bottom of my IP to let the steam circulate better.

    Last year my beets were also pale when I canned them. They never come back to their darker color. My beets are served in the PINK!

      It’s the type of beets. For instance, Chioga beets are striped and would likely can lighter.

    Well I did it. We grew a small patch of beets, me telling my hubby I don't like the. And when they were ready to pick, I looked for your video to follow to can them. They turned out perfect. I got 10 pints. I fixed a jar for hubby to eat and thought I'll try some. Wow, can't believe I have found a new veggie to eat, lol. And thank you for making this video to help in canning them. Gonna be planting more beets too. Also I did 3 pints pickled. They are awesome. Used your beet pickling video and recipe. Your such a great teacher. Thank you for doing these.

      When I met my hubby he loved beets and I hated them. They smelled moldy to me. Then I had them fresh. And have loved them ever since! Commercially canned is just nasty lol

    Today I'm resting from dental procedures done yesterday & watching videos as my inspiration.
    I'd love to find a great source of beets but down here in South Louisiana, beets are a winter crop, so that's coming soon.

    I like to roast mine as opposed to boiling. It keeps more of the color concentrated.

      @@lindarobb3868 I wash them and poke holes like a potato and place them cut side down in a roasting or casserole dish. Back at 350 until fork tender. Then I just peel the skin with a paring knife carefully and then you can process as you normally would. In order to can them they need liquid but it’s not being double boiled if that makes sense.

    Is there someway to preserve the juice from the boiling process to add to the jars instead of water? Can you pour thru cheesecloth a couple of times to remove nasties? Seems like so much nutrition going down the drain?

      @@celenaclarke6863 That sounds great. I’ve kept the beet juice and did run it though cheesecloth several times and used it in the beets. What I didn’t use in the beets I poured on my plants!!! Got a good recipe for the beet jelly?

      Many Receipes suggest using the beet water in the jars instead of water or half beet juice and half water to help keep the nutrients and the color

      You can also use the beet juice in garden or to tie die your white t-shirts!😆

      I use the beet water instead of just plain water. It helps keep the beets red and I think adds good flavour to the beets. If there’s any sediment I use a new or clean cotton cloth for straining water. Cheesecloth is too holey 😂

    I canned plain beets and when I removed them from the caner the jars only had 1/4 water inside. NO there was no siphoning. Are these safe? Thank you.

    Why don't you use the pressure cooker to precook the beets? My pressure cooker directions are to cook for 6 minutes, cool, slip off skins. Then, put the beets into the jars.

    Oeps..
    First time pressure canner here.
    I boiled my beets and let them cool.
    Then peeled en sliced them.
    Now I read in te USDA guide you have to put HOT beets in the jars.
    Do I have to reheat them?
    I am afraid they will bleed, because I sliced them already.
    Please help.

      Technically, yes they need to be warm. You could microwave them for a minute

      Why would you think they are sweet? They are plain beets

      @@SuttonsDaze well I had a few pieces left over that didn’t fit in the jars so I ate them, they were sweet before they were pressure canned and tasted awful after.

      @@reneeruse9584 I pressure canned beets the that I grew myself and they were wonderful, and tasted delicious. The next year I didn’t plant them and bought them from the store. They were horrible. My consensus is that the fresher the beet is when canned, the better they will taste after canning. This year I made space to grow them myself so I will see how they do. I canning 7 lbs today that I harvested yesterday evening so I’m excited to see how they do.
