- We purchased 25 labs. of beets from Azure Standard and did half as regular pressure canned pints and half as pints of pickled beets shown in this video. They turned out fantastic! Because of the vinegar in the recipe, we were able to steam can them, which produced clean jars and no siphoning.

My favorite way to get beets ready to peel is in the oven (400 degrees). I put them in a roasting pan with a half inch of water, cover tightly with foil and roast for about 20 minutes. Turn oven off, let rest for 20 minutes then remove from oven and let cool until you can handle them. So easy.

I love pickled beets! I grew up with pickled beets on every holiday table. My Mom was a huge believer in the best pickles are made from the tiny baby beets. We grow beets- but, they don’t reach maturity. I follow mom’s procedure and tie all the spices into a piece of cheesecloth. Pickled beets in a sandwich 😊

Yep, I’m a Pa Dutch area gal and we had them at holidays also….even had them at regular dinners too….along with pickled eggs! 🙌🏼😋

My granny made the best pickled beets. She was known for the best chow chow and pickled beets. I’d love to have just a bite of that chow chow today
I have lots of pickled beets on the shelf.. absolutely love them.. I also did a case of plain beets for my mom, she like them plain and then makes them into Harvard beets.. I used my Geoffrey Zakarian mandolin to slice mine.. also wore gloves.. they are a messy job but the end results are so delicious ..

I love beetroots i made it many years ago and it tasted too muddy but i didn't add the correct ingredients because i had know idea what i was doing but now lots of years later good tips from my adorable teacher Pam 😊 i know what to do thank you
I cut the beets and onions and put them in the jar, then pour the hot liquid over. It works very well

I plant the clyndri beets because they cook quicker. I plant in kids swimming pools since I am unable to plant a big garden. I am 80 so now planting this way and in buckets is how I roll. Thank you for all you do, you are amazing.

Hi Pam. They should come off after you cook the beets. I always put mine on cold water after they are cooked. Mine always take way longer than 20 minutes.. anyways great video. We love pickled beets. 🇨🇦❄️

My Grands had a large garden and pickled beets are the only thing I remember canning with my grandma. I love them! I usually put a couple of hardboiled eggs in the juice.

I boil my beets starting with cold water and let them cook for about 20 to 30 min depending how big they are. I didn't have a problem with the skins coming off. I'm exciting about learning how to can them. Thank you
I canned pickled beets yesterday. We grew them and every year they do better. For Easter I have taken over making pickled eggs that my grandmother used to make. They are my Dad's favorite.

Gotta do what you have to do. I love beats but no one else in family will touch them. Sometimes I just get some and make on the side. Turnips also, but if I make stew, they eat it all.
I love making and canning pickled beets every year from our garden beets. I try to pick small ones to leave whole. It's a very old recipe from my best friends mother-in-law. Only use vinegar, water, sugar, ginger, salt and everyone loves them. I don't like the Ball recipe but love my steam canner.

What is the difference between pickling salt and canning salt please?
I don’t have a problem with the skins on beets. I put them in a pot fill with water to cover. Bring to a boil and cook until a knife inserted into the beets come out easily. They peel very easily. Sorry they were a problem today.
Also if the beets aren’t cleaned very well they will taste like dirt. Love all you do. Thank you.

I watched a youtube video that explained how to use the freeze dryer to vacuum steal quart jars with mason lids. take the inside unit out and put the jars in ready to seal with rings on loose and use the vacuum function by itself. can do six jars at a time.
We were not able to replicate those results and abandoned freeze drier vacuum sealing. Jim

Now I know where to get beets. I live in an apartment and I haven found a farmers market that has beets.
I just automatically peel raw beats and rewash. I don't waste my time/utility energy trying to heat/soften/peel.

We grow our beets in a fall/winter garden. Summer is way too hot here.
I just tried canning beets for the first time - I oven baked them first, then second batch just boiled them. I used the boiled egg method and put the beets in ice water and the skins just slipped off. Then I put each beet in a 'french-fry' cutter and it slide them right through like soft butter. Then stuffed them in jars and pressure canned them (after adding the vinegar and salt and sugar solution) for 30 minutes. I don't eat them so had to rely on husband to taste test. He said they tasted 'just like store bought' - so it was a success!

I've only knew that once cooked put into cold water and rub the skins....they slide right off

I put right into the refrigerator for eating right away.
I use my Instant Pot to cook my beets, so much easier and not as much mess. Could you also steam can the beets in the Steam Canner that you showed us how to make?

I am wondering if the low pH of the brine penetrates the beets during processing to lower its pH, or how does that work? I notice that some salsa Ingredients have a pH above 4.6. Does acidification lower the pH of those foods during processing making them safe?

Probably--be sure to raise the jars above the level of the water.
Could you have put some peeled hard boiled eggs in with the beats in the jar, right before steaming them?
So Pam, you steam canned in two different pots? One is the official Harvest Brand Steam Canner and the other is a plain old deep pot with a vented lid?

Pam, you often talk of emergency preparedness. Do you have a faraday cage to protect some of your electronic devices against EMP pulses. How to construct one might be a good video to do. We recently had some solar activity that triggered an aurora borealis type event from solar corona eruptions that could be seen at many locations worldwide. Many people are unaware that our own sun can emit EMP pulses strong enough to ruin electronic devices and most of us have a house full. Almost all the things we use daily contain computer chips. I am sure many people are unaware of this grid down situation that could take months to recover from. Not trying to scare anyone just trying to inform. Could you address this grid down situation?
That is a great idea. I have toyed with a few ideas on how best to do that. I will add that idea to my growing list for future videos.

Can you steam can everything that is safe to water bath can?

I have noticed some canners who use pre-canned tomatoes for making salsa and canning their own salsa. I've also seen a few who use pre-canned fruit to make their own Jelly. I am very new to canning. I've purchased the USDA book you recommended, and just got one of the Electric Pressure Canners you reviewed data; for my Birthday. Is this something that is safe practice? I can't find data on this practice except for a few Bloggers who say it's totally okay and safe. Thank you again for all of your videos. Your teaching style is exactly what I crave as a homemaker, because I trust your opinions greatly. I pray you're continually Blessed for all the hard work and efforts you give us.
One of the things we have found is if you are canning commercially canned foods (tomatoes, carrots, corn...) the possibility is that they will become mushy and the texture and taste will be different that if you use fresh from the beginning. Thanks for watching our channel. Jim

I don’t know if you will see this, but I just watched a video about turning commercially canned beats into pickled beets. I have cans of beets that I would love to turn into pickled. Since they were already cooked, I’m assuming she lowered the processing time to 10 minutes in the water bath. I do see USDA says 30 minutes. Your thoughts?

I have a question.
I want to pressure can plain beets.
I have boiled them. Cooled them. Peeled and sliced them.
Now I read in the USDA guide you have to put HOT beets in the jars.
Is it realy necessary? If so, how do I reheat them. I am afraid they will bleed heavily because I already sliced them.
Is there another solution? Maybe pressure can them a bit longer?

Hi Rose: I couldn’t find your email so I am asking here; I accidentally ordered 3 large cans of tomato sauce (each can is 105 ounces!) my question: can I safely put the contents into quart jars and water bath? I am in Houston so we’ll below 1000 ft elevation.
Should I add any thing to the hunts plain tomato sauce before canning?

I know a lot of people that recan things. I would so I didn't lose all that paste or if u don't have room in ur freezer for that much. I would add I believe its one teaspoon of lemon juice to the jars before canning. Good luck.

I tried beets once and scrubbed well and peeled but to me they still tasted like dirt. Could someone please tell me why
After boiled properly, you must put them in room temp bathe water to peel. I do not put them in ice water. That just makes it more difficult to remove the skin. Then use a chopper, while still very warm, to very small chop them, add ghee to serve.
(PS. Just remember beets will change color of BM to more red to realize you are not passing blood. Just as you realize when you eat asparagus, bm will turn more green! Enjoy! Both are fantastic! As well as very healthy!)

After cooking the beets dump the hot beets in ice water for a few min. The skins will slide off.
