For Absolutely the BEST fall apart, Juicy, Delicious stew or pot roast, my butcher of 55 years had told me the Best cut of beef fir those type of dishes is Shoulder. Its like the poor man's filet mignon!! Fantastic for braising!! Enjoy!!😉
Damn, I almost bought the shoulder but got a choice tender chuck instead. Looks like we're eating lots of roast this week so I can figure out which cut I like better 😂
Great recipe! After dinner, I poured the leftover stock and vegetables into a blender and made a puree. Then, I added the leftover roast and some frozen peas and had an amazing soup for the next few days!
Had to come back to comment because I just tried this recipe and OMG. Best pot roast I’ve ever had! The meat was ridiculously tender and juicy!. This will forever be my go-to recipe from now on 😊

I love to cook and have cooked constantly for decades 1000’s of things and never thought of substituting applesauce with vinegar when out of apple cider granted not the same like for like flavor replacement but still a fantastic hack! Thanks for sharing!
I made this recipe over the weekend and my family loved it! Usually we have small portions but everyone went for seconds and ate way more than I expected! I cooked 3.2lb of beef for 62 min + 15 min natural release. I made a couple of substitutions based on what I had in the kitchen: I used 1 tbsp of Better than Bouillon + 3.5 cups of water instead of beef stock, white vinegar instead of apple cider vinegar, dried parsley instead of thyme and rosemary. I also skipped the celery and doubled the onions and bay leaves to better suit my family's palate. The onion added a WONDERFUL sweetness to the broth-- I was so worried that this would've been too salty for us but it turned out perfect! My pot was nearly full by the time I added the onions so I definitely wouldn't have been able to steam the potatoes at the same time. That was fine though, because I planned to make mashed potatoes separately anyway. :) Next time I'll prepare some broccoli as well. Thanks so much for the recipe!

Came home after a 11 hr construction job, I was tired so I stoped off at butcher picked up a beautiful roast 3lbs , rinsed it and put in instapot with veggies added a cup of water and McCormick pot roast seasonings, set instapot at 1 hr once done I will remove veggies and add cornstarch slurry to juices. Hope it turns out and I don’t fall asleep waiting for dinner to be done lol
Interesting fact: The potatoes will be mushy afterwards... but if you refrigerate them overnight, they firm back up nice and proper! Cant say the same about the carrots though.
Aloha it's so fun knee that we all do almost the same kind of recipe but might add things differently like say thicker broth or add other kinds of seasoning, I dont see you adding butter to yer mix by adding butter you will see the difference in taste I use lots of butter smile, I alway use butter in my cooking I have no secrets I'm not a chef but love tooooooo cook and bake its a good hobby, even gardening good for the body wen u retire 71 young gotta keep moving once u stop well thats all folks as bugs bunny would say,,, we use a instant pot pressure cooker and came wit airfryer and this is the next best thing to sex smile, well mahalo for yer time in preparing the awesome vid have a super year

Can I make this without having to cook the vegetables in the pit because I wanted to just make the roast and gravy over some mashed potatoes and corn or carrots
How the heck do you stop the potatoes coming out mushy? Have tried this recipe two separate times and both times the potatoes and carrots came out mushy and disintegrating.
Searing the meat with all those spices and seasonings on it is a bad idea. You’re just burning the seasonings and not really getting much browning on the meat. Dry it off, sprinkle with large grain salt and let sit. Come back and pay it dry again before adding it to a hot pan or instapot. Make sure your oil is hot too. Then add the seasonings once you put the holy trinity in after removing the roast after searing. Once your liquids are back in then add the roast and let it all go.
i put 2.5 pounds in for 40 minutes and it came out super dry and tough. i figured i overcooked it but all the recipes seem to share the same amount of time. it wasnt pink at all it was all brown as if it was cooked so i wonder if it was overcooked.......

I made this today, unbelievably delicious and fork tender! Made 700~ grams 40 minutes and 10 minutes natural release.

It’s only a 3 minute video and she said at 2:40 pressure cook on high for 60 minutes, let it sit for 10 and than release the pressure.

This may be a silly question, but do the carrots and celery get thrown out?
Yes, we throw them out because they have given most of their flavor to the pot roast but you can eat them if you would like.
Every single time it says foodburn if I use the saute part it won't cook ahhhhh help I add lots juice I scrap bottom idk of mines defective or what

I use Custom... Yours might say Pressure Cook.
What’s the apple cider vinegar do?
It's there for flavor (acid cuts through the richness) and it helps tenderize a bit.
If I use a smaller amount of meat, do I need to use a smaller amount of time?
The cook time is based on weight. In general, assume 20 minutes of cook time for every pound of meat.

yes, but they add flavor.

60 minutes?? I think that's way too much time. The veggies would be mush. 30 minutes tops.
