If you are in the middle of the drift and your steering is upside down , it's better when pedal shifters are fixed on the column. So both ways have their pros and cons, but sins this is not 700hp Ferrari, it's better this way.
I am not sure what you mean by low profile.... if you are talking about larger rims and less tire, this is done for looks. Some cars are okay with this, and some not. Best way is to use what the car maker says to use, and very few suggest low profile tires.
