The Opportunity of Ghost Kitchens // Bruce Schroder (REEF Kitchens) speaks at RestaurantSpaces

  • In this presentation, Bruce Schroder (President of REEF Kitchens) explores how we navigate the wave of urbanization and the on-demand economy that is rapidly transforming the restaurant industry.
Food delivery is a key part of this new landscape, with the industry growing 300% faster than dining-in at traditional brick-and-mortar restaurants. Consumer demand for meal delivery services continue to climb, as 60% of Americans order delivery at least once a week, and 59% of all restaurant orders by Millennials are deliveries. Uber Eats alone is delivering about a billion meals a year.
REEF Kitchens is addressing this challenge by reimagining and redesigning the use of 5,000 static parking lots and parking garages across North America which are being transformed into dynamic logistic and mobility hubs that are uniquely equipped to house delivery-only kitchens.
With delivery-only kitchens, food entrepreneurs are able to capitalize on proximity-as-a-service and quickly scale their businesses - all while minimizing operational costs and delivery times, and maintaining high standards of customer service, operational excellence, and delicious cuisine.
This presentation was recorded in Pasadena at RestaurantSpaces 2020. Produced by influence group, RestaurantSpaces is an annual one-of-a-kind retreat bringing together executives in design, development, and tech, to explore the future of the restaurant.

We get Deliveroo in Edinburgh, Scotland. I find their operation system horrific. They moved into Supermarket delivery during Covid mostly. God help you if there's a problem with your order. They stick to a Computerised syste,. If you haven't received an item, NOT RECEIVED, they want you to upload a photograph of this item. They don't realise I can't photograph an item which doesn't exist. They refuse to give you your money back for an item you ordered, paid for, but didn't receive. They're a horrible bunch.

Uh, I'm pretty sure Domino's had to drop the 'Guaranteed 30 Minutes or less' offer back in 1995 if not 1993, which was just about the same time they stopped providing those Chevy S-10's as company delivery vehicles. Am I wrong?

This just takes money and jobs away from servers, bartenders, and hosts that provide service in restaurants. The problem is that people look at the margins in our industry and say "i can do that, it's just a business" don't fucking get into this industry if you don't care about your work. If you care about your money, expanding, and cutting corners to do so, you get hollow, bland food. You so boldly miss the point and think our function is feeding every mouth in the city. Also, I live in San Francisco and there are 3 cloud kitchens in SF and Oakland. They legit look like check cash places with lines of uber eats, postmates, and caviar drivers. Yet another middle man concept relying on the hard work of middle and lower class people only providing a cheaper space. Why is the world becoming so autistic??

Prices will probably go up also, since they will have to pay these companies.
For efficiency, people like drivers will be struggling. If things keep going this way, eventually all of us will be squeezed out financially.

@@vshah1010 no do your research it’s the opposite , everything in this world isn’t out for gimmicks. There’s entrepreneurs and then there’s corporate and the bridge in between doesn’t have to come with damage. Obviously just avoid predatory companies.

Dude I just got a job at one of these things. They're paying 20 bucks an hour. They should be taking peoples jobs. They pay you better than the damn restaurants themselves.

I don’t see the need for this people already can go to their phones and get Uber eats to deliver their food this is absolutely unnecessary it’s just going to cause a problem in all those area ms where parking is limited and crucial to these building. Stupid idea In my opinion
