💑 About Hercules Candy
Hercules Candy has been on Steve’s side of the family since 1910(ish). When he took over in the 70’s, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesn’t love being on camera and is very elusive) is their oldest daughter. Karen has been working for Hercules Candy since the twins (Craig and Cara) were about 6 months old and everybody else is a new recruit. Don’t forget to subscribe and hit the 🔔 for more videos!

The Velveteen Rabbit was a sad story, but really well written. Scott was so excited to taste the cream! He made me want some… even if it the sniff test results were lotion and gloves 😂
My gf put me onto Hercules a couple months ago and I can say I'm hooked. She came down to visit and we went to the store such friendly owners and staff. Best part is we got to try these before the video came out. There super good if anyone is wondering or wanting to get some!

Since you do creams in cornstarch moulds have you ever considered hard gums? It's similar but with gelatine or agar agar.

Would love to see you guys attempt some recipes with popcorn. Things like chocolate covered/drizzled on, caramel, could even mix in some things like cashews for clusters they would be awesome.
I just came across your site today and everything looked so delicious, I totally wanted some! Mostly hard and ribbon candy because good homemade is really difficult to find. I followed the link, but almost everything said “Sold Out” on your website!! Only a couple out of all the flavors were actually available. That was sad. Hopefully I will remember to look sometime in the future to see if anything has been added to it.

for the powders, maybe a silicone brush would work to sprinkle on things
just dip the brush into the powder then gently tap the brush over the object to disperse : ) should be much faster and cleaner to do
i suggest silicone only cause it's easier to clean and can use for multple powders then
For dusting the tops of the chocolate, you could use a brand new blush brush. Cake artists use them for luster dust and edible glitter. Cocoa powder has a texture and consistancy that is close to luster dust. :) I would love to buy some of these creams! They sound so good.
They sound amazing and look sooooo delicious. However... the shipping cost is horrible. I guess I'll have to get someone in NY to buy something for me at Hercules and mail it.

For me red velvet cake tastes like chocolate cake and food coloring. There is so much red food coloring in it that it flavors the cake. It doesn't make it necessarily bad, but I prefer to only see my cake going in one end, and not coming out the other the same color.
The color of those creams on camera reminds me of Dubble Bubble gum. The red velvet flavor though, yummy!

You mentioned Lofty Pursuits, so I checked their videos out. While they explain candy making, I found them to be boring. Craig’s videos are very entertaining and fun to watch! The videos are more personal where we not only learn about candy making…but get to know the people who make it. Keep up the great job of sharing your lives with us!
Use a mesh tea ball....the kind with the spring closure and metal handle. I have used mine to dust powdered sugar and it works well. Just a light tap will give a nice dusting on top.

You guys should get like a large sifting sheet to put under all the cornstarch before you set up the molds, that way you can just lift it out and sift at the same time
Birthday cake is one of my favorite flavors but I bet the red velvet would be best covered with white chocolate

Pro tip: use a sifter and tap against the side of your hand like you would with powdered sugar.
Maybe a small sifter for the cocoa?
I always wonder what the process of cleaning the equipment is. Especially the sticky stuff or hard candy, have you ever made a video about that? I'm probably the only curious person. And I wonder if any of the other candies were spicy after you did the reaper candies.
The first time I saw the creams being pulled out of the molds I nearly freaked out! I had no idea it was made of cornstarch! What a clever method! Who knew! I certainly didn't! No candy make here, but candy lover. I could live on chocolate covered raisins! New to your site, will consider ordering. Love the exchanges among staff. It seems on camera like a fun place to work, but I know what an old bakery smelled like - don't know how you stand the smell of that much sugar all the time.

I am not suggesting this to make more work for you, however "red velvet cake" usually has cream cheese frosting. What about making a very sppecial twofer candy with the cheese cake half? Oh I also thought of a another "fall" flavor for your special creams "carrot cake".
