    Ingredients:
    3 cups of Flour
    1 ½ cup of Sugar
    1 tsp of Baking Powder
    1 1/2 tsp of Vanilla
    1/2 tsp of Salt
    1 1/2 cup of Whole Almonds
    4 Eggs
    2/3 of a cup of Unsalted Butter, softened at room temperature
    1/4 tsp of Almond Extract
    Process,
    1) Position oven racks in the middle and top of the oven and preheat oven to 350 degrees. Line 2 large baking sheets with parchment paper and set aside.
    2) On a separate baking sheet, add the almonds and make sure to spread them in one single layer, toast them in the oven for about 10 minutes or until they have toasted up a bit and they are a lovely golden brown color, allow them to cool a bit and chop them roughly.
    3) In a large bowl mix together the flour, salt and baking powder to combine, set aside.
    4) In the bowl of an electric mixer fitted with a paddle attachment, cream together the sugar and butter, add the eggs, almond extract and make sure it’s a nice creamy mixture once everything is incorporated.
    5) Add the dry ingredients and mix until it's well incorporated. Add the whole toasted almonds and mix them in well.
    6) Dump the dough onto a heavily floured board and divide into 3 equal portions. Roll each piece into a log that’s about 10 inches long and 2 inches wide, make sure to dust with flour along the way to keep dough from sticking. Set the logs about 4 inches apart onto the prepared baking sheet, press gently to flatten each log just a little with the tips of your fingers. Bake until the logs are golden and firm near the center, about 35 to 40 minutes or until they are lightly golden but still soft making sure you are rotating the baking sheets half way through to insure even baking.
    7) Let the logs cool enough to handle, about 10 minutes. Transfer logs to a cutting board, using a serrated knife, slice them on a sharp diagonal into about 3/4 inch thick slices. Arrange the slices on the baking sheets, laying cut side down. Return to oven and bake for 7 minutes. Turn the cookies over and rotate the baking sheets and bake for another 7 minutes or until golden and lightly browned.
    8) Let cool on the baking sheets for about 5 minutes before transferring to a wire rack to cool completely. (The cookies will not harden until totally cooled) Enjoy!

    Laura, you are amazing!! I have been cooking for over 50 years and am considered a very good cook, but you have certainly taught me a few things. I just discovered you a couple of weeks ago when searching for a recipe, and have been hooked ever since. Every recipe I have tried has been delicious and so easy to make (and the videos are fun and so helpful). I made these biscotti tonight and my husband is in love with them. You are the real deal, my dear, keep up the good work!!

      I always use Ghirardelli’s 60% cocoa baking chips or their semi sweet chocolate chips!

    Hey from India. I have been watching your recipes with awe and great delight but when I saw the almond biscotti (which I love), I just had to make them. I substituted flour for whole wheat flour and added some chocolate chips.They came out DELICIOUS! Thanks so much and keep inspiring!

    It depends on where you live. In some places, vanilla essence is another way of saying imitation vanilla flavor. In other place, vanilla essence is made by extracting the vanilla flavor through supercritical fluid extraction, which is a method that does not require an alcohol solvent. Vanilla extract generally means the flavor is stored in an ethyl alcohol solvent.

    Have tried so many of your recipes, they totally rock! My family loves it! I mostly tried your desserts and they are really simple and come out perfect every time. Definitely gonna give these a try. You don't even have to make a special trip to the store to make these.

    Tip: adding melted choclate on the bottom of the biscotti and letting it harden gives it a greater taste!

    Thank you! I decided to take a chance and made the full batch for my huge, 21-person brunch and they were really good! Laura is the best:) I dipped half of them in chocolate and kept half of them plain. Everyone loved them!

    In French we use the same word, "biscuit", though ours usually don't have that very sharp-angled shape which is immediately associated to Italian cuisine. Great recipe, and I love your funny little teaspoon!

    Vanilla is also a pretty standard, neutral flavor. You can dip the bottoms or half of the biscotti in melted chocolate and let it harden as well and that can add a different type of flavor. The almond flavor is very subtle, not too strong, you should give it a try.

    I actually added espresso essence instead and made them much thinner. they're the perfect snacks to substitute potato chips. My family love them so much! Thank you for the recipe! :)

    I made these without the almonds due to family requests and they were delicious except that the almond flavor wasn't very strong. So I made a second batch and used a tablespoon of almond extract. This was better but I probably could have added even more extract. Thanks

    No problem. Essence is much stronger flavor, generally, so you have to be careful how you use it. It is usually used by professional bakeries and such, and most recipes assume extract is being used.

    Laura, I have been making your holiday biscotti constantly. I made it once and now every time I see my sister, mother, or any of my friends they demand me to make it for them. I've made like 20 batches of them since christmas. It is crazy.

    Hey, I have seen them in the Italian Bakery in different flavours, like raisin oatmeal chocolate etc.., but almond is the standard. you can Google more flavours and substitutes. But try the Almonds, it is a classic.. All the best.

    Use the same amount, because you could see that the sticks of butter were cut, not whole. She was just using a third from each stick, because each stick is equal to half a cup. She probably just cut off some from each stick to use the thirds.

    I make these all the time (My papa from Bari is obsessed with mine :P). I always add Grand Marnier and orange juice & zest! Funny I have never put butter in my cookies though...I shall have to try that and see how it changes them!! Keep up the great work Laura, I watch for a new video everyday!! :)

    hi laura, you should try coocking them on a rak while the oven is on turbo mode. this way you dont need to flip the ckookies :)
