Great ideas! I’ll forgo the rice and maybe stick with the protein and assorted veggies. Also, want to get every tasty drop, so it’s a plate versus a board for me!!😉

I usually make pumpkin wedges out of my mini pumpkins. fry them in oil over low heat.
