    ⭐️SHRIMP FRIED RICE With EGG
    • EASY SHRIMP FRIED RICE...
    INGREDIENTS
    4 cups cooked long grain rice
    1 lb medium shrimp
    1/4 tsp to 1/2 tsp salt
    1/4 tsp white pepper
    2 cloves minced garlic
    1/4 to 1/2 tsp minced ginger
    1/4 cup chopped green onion
    1/4 cup (2 oz) chicken broth
    2 1/2 tbsp dark soy sauce (or to your taste)
    2 tsp sesame oil
    3 tbsp cooking oil (add to frying pan)
    4 oz to 5 oz bean sprouts
    1 cup chopped green onion
    *skip freezing rice if using day old*

      I never had peas and carrots in fried rice until I left St. Louis, MO. I was disgusted to learn that in other states, in addition to peas and carrots, the rice was yellow or light in color, no beans sprouts, no eggs, no flavor. When I realized they didn't make a St. Paul sandwiches and that most restaurants were using rodent and scavenger meats. I learned to make my own.
      This is a good tutorial for rice 👍. I use a lil fish oil to replace the oyster sauce that most asian restaurants use, bc I don't eat shell fish. I add my sesame oil mixed with avacado oil in the beginning. Not sure if it makes a difference.
      The cities that appalled my fried rice expectations and had no idea what a St. Paul Sandwich is: Memphis & Jackson TN, Los Angeles CA, Newark & Jersey City NJ, All NY, NC, GA and Houston TX. But I've been free of "Authentic" Chinese Restaurant foods since 2010/2011. I learned that the St. Paul is not authentic Chinese and is specific to STL.

    I'm a single dad of three teenage boys. I tried this fried rice yesterday and it was a big hit. Super easy and fast. (After the rice is cool) I doubled the recipe and we ate it as a main dish. Thanks for showing me how easy it really is. 👍

    Finally, someone who didn't use peas and carrots in their fried rice. You also used green onions and bean sprouts. This is very close to the recipe that I like. Only thing missing was the addition of egg(s). Thank you for sharing. I will be trying this.

      Fried rice is when I empty the veg. bin of what ever but I always add eggs. For me that is the little treat. (and the only protein)

    Of all the rice tips I’ve seen the idea of freezing for 20-30 minutes makes the most sense. If I don’t have day-old (which I never do!) this seems like the best option.
    Btw, for people who haven’t tried the sesame oil thing - she’s right! - it’s a real nice light flavor drizzled on at the end of just about any Chinese-style recipe! Worth getting some.

      I make fried rice very often, at least once a month. I make the rice fresh and wait for it to cool for an hour, then make the fried rice (even have done it instantly from cooking but I used less water) .Never had an issue! It is always amazing. You can make rice the same day for fried rice, you just have to plan accordingly (such as less water or use basmati rice). My preference is Basmati rice, it's the least starchy and holds its shape easy, but I've used multiple types of rice including long grain, medium and short grain (husband is a rice fanatic) and they all come out similar, but basmati has the best flavor in my opinion. It's crazy how many food myths there are, which are backed by only trying something one way!

      I use boil-in the-bag rice sit it in cold water while I'm cooking the other ingredients and it turns out great you don't have to freeze it!👍😊

    You got me when you said no peas!!! They don’t belong in fried rice....I also add a small sprinkle of Chinese 5 spice powder.....great recipe....

    I just watched several shrimp fried rice recipes and this is the best by far, going to make it right now, only I'll be adding an egg also. Love that you're not using peas and carrots like all the other videos I've watched. I also like that you mixed chicken broth with the soy sauce, very clever idea and the bean sprouts are a great idea also. Thanks for sharing!

      @@tomc8930 You're welcome. Sometimes a raw egg is added to the meat going into an Asian dish, which is called, velveting and is supposed to help the meat stay moist, but it, too, gets cooked. I tried this last evening and it seemed to work as the meat was so tender and juicy. But that's not what you asked about. Just felt like talking to you. :D

    The restaurant was called Lee's Den, it opened in 1957 closed in 1988. I worked there as a busboy during the early 60's, best Chinese food in Houston !!

      I love scrambled eggs in mine, in fact I add more to the leftovers. I scramble them in a seperate pan, making sure there are visibly nice size pieces to single out during eating.

      There was a restaurant called Lee's Inn, in the Airline-Tidwell/I-45 area. I remember going there long ago.

      @Brenda Lee Lee's Den was located on South Main street in the 60's, Lee's Inn was located on I45 and Tidwell. Two different families owned them. I knew both families very well. I went to Reagan HS, in the Heights, go Bulldogs!!

    This is perfect!! No eggs! This is the style that I grew up in back in Michigan. The place was Golden Crown in Bloomfield and it was my daddy’s Friday night family dinner tradition. And you aren’t the only one who likes mixing white and fried rice. I just liked the contrast in tastes and textures.

    We lived in the Houston area from 1970 - 1994. Lee's Inn is where my husband, my 2 sons and I learned to eat Chinese food. We still reminisce on how good the food was at that restaurant.

    I first learned about fried rice when I was sent to Thailand the first time during the Vietnam War in 1969 and was put up in a hotel in Bangkok until the base I was going to had made arrangements for my travel to the base of my assignment (U-tapao Thai Naval Base) where I was to work on B-52's aircraft. When I went into the dining room to eat I noticed one guy who was also waiting and I asked him about the dish he was eating and he told me that it was fried rice and I had never eaten it before. He talked me into trying a spoon full of his and after tasting it and loving how it looked I ordered the same with shrimp and loved it and from then on I have been eating and loving it. Upon returning to Arkansas years later I purchased a wok at the area air base and still have it even though I have not used it much lately.

      You need to scramble an egg and you forgot to do what the dish is called and that is fried rice. You have to fry the rice to get the residue or the roast Tasteninstrumenten the rice. That’s where the color comes from. Not from the Soy sauce. But it still looks good.

    Memories of my late mom and late sister are linked to meals of Chinese food like this. Happy times. The restaurant we frequented is gone, and when I need some comfort food, this is what I seek out.       YES! I always add sesame oil to my fried rice. For those unfamiliar with sesame oil, buy the dark sesame oil in the Asian section of your grocer. Stay away from the lite stuff. The dark oil gives your fried rice a nutty flavor.

    It looks so good, love shrimp fried rice. I tend to be sloppy when stir frying so I prefer to use a pan with deeper sides. Otherwise my cooking decorates the kitchen walls.

      I agree that it’s difficult to cook fried rice in a pan with low sides. I’m using a pan with 3inches/ 8 cm sides. I also bought a glass cover which fits this pan. When I add in the leafy green , I increase the heat and cover the pan so my veggies will have the texture I want. You may be able to find such a pan online.

    this is perfect for me onions and bean sprouts are my fav add in's peas, carrots and eggs are cool but not mandatory love it

    Thank you for being methodical and patient in your explanations. The way that you have laid out the "foundation" makes it easy for additions and modifications. I prefer using a Wok, but that is another topic. Thank you.

      Even Asians don't always use a wok. I like a wok because my cook-top is electric and woks are thinner. I like a carbon steel kind of wok.

    I remember Lee's Inn. That was one of my favorite restaurants in Houston. So sad when they closed. I have not found another Chinese food restaurant to compare with the high quality food that Lee's Inn served.

    My husband and I would go Lee's Inn in Houston at Airline &Crosstimbers when we were dating . We nt all the time . Their food was great !
