Crispy Fish and Poussin Chips

  • The Mcfry’s fried fish and poussin chips is a winner after a night out. But it’s also really simple to make it at home. Here’s how:
    For the fish: Make a batter by mixing together 1 cup Pembe self raising flour, ½ cup corn starch, 2 tsp salt and soda water as needed. Pat dry some tilapia fillets then dredge with some more flour and dip into the batter. Doing this helps the batter to stick to the fish nicely. Deep fry for 7-9 minutes or until golden brown and crispy. I like to lay it on a baking rack as I prepare the rest so the bottom doesn’t get soft.
    For the poussin chips: Heat a pan and add ¼ cup margarine. Let it sizzle a little and then add 2 tsp chili powder, 1 tsp paprika and ½ tsp black pepper. Squeeze in half a lemon and stir. Toss in double fried potato chips and serve with the fish.
    For the chili sauce at the end: Mix together hot water with chili powder, salt and vinegar. You can adjust the level of spice/chili according to your family’s needs.
