💑 About Hercules Candy
Hercules Candy has been on Steve’s side of the family since 1910(ish). When he took over in the 70’s, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesn’t love being on camera and is very elusive) is their oldest daughter. Karen has been working for Hercules Candy since the twins (Craig and Cara) were about 6 months old and everybody else is a new recruit. Don’t forget to subscribe and hit the 🔔 for more videos!

The fact that this a rare occurrence makes me appreciate how difficult candy making is, and how much Steve loves doing it
I love that they let it be out there on the internet for us to see. It's not so easy to make candy.
This is the closest ive seen Steve to losing his temper, but still the nicest guy around 😂

This was wonderful! I realize it was a loss for them, but to me, it was such a teaching moment, not to mention the ability to see that ‘this’ is what happens when doing ‘that.’ To be quite honest, I’d love to have a packet of the mistaken brittle than regular. I’d love it even more if it had a description of what was done wrong. It’d be exceptionally great to have an explanation of what went wrong, how, and more understanding of why & what it became.

For those commenting about people coughing into food...that's Steve and he's already wearing a mask. What I see is that the flavoring wasn't added first, as has been done in other brittles. I know when making fudge at home, the vanilla going in to the hot sugar mixture causes an expansion as the water boils out and leave the flavoring behind. lol, then it was just physics, if you have something that is getting too big for its container you do not add more stuff to it, it just displaces that much more volume. Glad no one was hurt. The mess is, doubtless, already cleared up. And just think, that could've all happened over on the burner....then you would have a mess. Hope Steve is feeling better.

In the uk the brittle is at least an inch thick and cut into bars but its mostly nuts (57% according to this bar)

Hey it can happen I’m just glad when they picked up the kettle that it was still boiling over and they didn’t get burnt I they should have added the coconut flavor and first then the rest but the baking soda made it rise so quick and the coconut was a lot Was this a double batch ? I was like Cara nervous laugh but sweating at the same time worried they was going to get burned I know it was a disappointment for Steve but he knows things like this happen & hoping it never will but it does glad your both ok

You can hear the disappointment in Steve's voice and his body language changed. He was upset but father and daughter handled it well. You both did what needed to be done to stop the huge mess from going even worse. Instead of the entire floor being a mess only a few spots were going to have to be scrubbed and scrubbed. LOL Like Steve said, "This stuff is not going to clean up easy." I hope you all did not have to spend hours cleaning up that mess.
In Cara defense she did ask “ not Baking soda not yet right “ Steve said ahh yes. You can put baking soda in. Cara “ are you ready for this” Steve said yes. So it should not come out of her pay check lol. 😂 This is something you don’t see often. So glad no one got burned.

Were you guys trying to make cinder toffee? Its the same as honeycomb here in the UK and we have a chocolate bar called Crunchie that uses it.
I'd absolutely love some of that plain brittle without the coconut! Do you ever sell mistake batches?
Their error was that they didn't put lime in the coconut and shake it all up. 😁

reminds me of when I made the first batch of my grandpa's peanut brittle by myself. Didn't boil over but got very close.

Have you tried freeze drying brittle? It is a big hit whenever I make it. It makes even the hardest brittle puff up and become cruchy, so you may be able to salvage the batch!

dont you have any of the copper bands? that give the bowl an extra 12 inches in height? if not you could find a metal worker who can roll some copper to go on the bowl.
I feel like this coconut brittle would be really over the top with almonds added in, or macadamia nuts for something extra special.

Quarter that amount of baking soda would have been sufficent. Does that batch even taste good? Imagine it's very bitter.

I don't make candy (there's only me to feed,) but having watched Steve and the gang over the years, I'm a whole lot less fearful of trying it if I someday wanted to.

I've just run across you guys! So, the mistake was they should have put the coconut in first, THEN the baking soda? In any case, I would love to eat the fluffy gooey candy he scrapes out of the kettle even though I know it would burn the tongue straight out of my mouth.

We don’t stretch our brittle at work and it’s never thick. We just gotta spread it out as thin as possible as quickly as we can
