Might I suggest to extend refrig time that you add some whey or some fermented sauerkraut juice to replace a TBsp of that vinegar? Leave your concoction at room temp for 8 hours. Then it should last for several months IF you can't get through that volume of catsup in 10 days or so. I do this with homemade mayo and it works great.

When I make ketchup, the killer ingredient is 1 (one) clove in the mix, that brings the taste closer to the "original". I use the leftovers from a canning batch during fresh tomato season instead of paste, it's a good way to use the not so pretty pieces.
I named that ketchup after myself of course 😎
For mine (since I use a classic rubra recipe an italian piedmont recipe) the method is different I use different ingredients:
Tomato juice/pulp
Sugar
Wine vinegar
salt
Paprika
Lemon juice.
I just mix everything and cook low heat until it's really concentrate.
In taste it is very similar to ketchup but has a rustic touch that I really like and the ingredients are easier to find.
And it mixes well with the homemade mayonnaise to create the pink sauce (I know it usually need a little bit of Brandy but I like to keep it simple with just ketchup and mayo) which is usually my ultimate goal.

Heinz. I was raised in a small town in Canada. Leamington was a big tomato growing area and it had a Heinz factory that made ketchup. Ketchup (always only Heinz) was very popular there and I had an uncle who even put it on apple pie.
It is Thixotropic. Thixotropy according to Wikipedia, "is a time-dependent shear thinning property. Certain gels or fluids that are thick or viscous under static conditions will flow (become thinner, less viscous) over time when shaken, agitated, shear-stressed, or otherwise stressed (time-dependent viscosity). They then take a fixed time to return to a more viscous state."
So, yup, a non-Newtonian fluid, but the particular species is Thixotropic.

pro tip: mix xanthan gum with the other dry powders before dumping those into the ketchup, and there is no risk of it clumping.
Congratulations with your 4 year anniversary! Here's a little question about bread. Although I follow the standard sourdough method, I normally bake with normal instant yeast because of time constraints. My breads come out great: big, nice crumb, and delicious crust. However, I never get to get an ear. I do cut the dough at an angle of 45 degrees, but somehow the dough isn't as firm as it should be when using the lame, and the ear never appears. Any tips?

Heinz ketchup is the best. Do you have any suggestions to make this where xantham gum and white distilled vinegar are hard to get. Tomato paste is too, but this I may be able to make myself. I'm currently living in Japan and have had a really hard time finding these ingredients. I can get them online but they are so expensive it's not worth it.
I do have access to apple cider vinegar and rice vinegar so I wonder how these might turn out in the recipe.
Also, congratulations on the anniversary. You are the first CZcamsr I found that got me into baking my own sourdough bread and now I've brought it here to Japan. It's nice to be able to get fresh bread in a place where "real bread" is quite expensive.
Do you have access to white vinagar? Otherwise I'd go with rice. Xanthan gum you may be able to find where they sell stuff for gluten free baking 😊

Heinz. This makes a LOT of ketchup. Can you freeze some of it to use later?
Yes, honestly, I usually have it in the fridge for months with no problems. The amount of vinegar makes it a pretty stable solution, but you need to make sure your kitchen hygeine is good.
When you take something out, make sure you with with a clean cloth and seal it right away :)

Nearly identical to the recipe I use, minus the MSG. Still, I feel mine tastes nothing like Heinz. I'll need to analyse the proportions more in depth, I think.
This will be the third ketchup recipe I will be trying, so I hope this does not fail me🤞🏻The first one was spicy as no ketchup should be & the other one tasted like marinara sauce & that’s not good on a burger 😅

I like homemade food, but without all the sugar.
Heinz is my fave ketchup too! I use a Top Secret recipe and make it Keto with allulose golden syrup and monkfruit sugar. Turns out very good, like Heinz but tastes maybe fresher, and the recipe is very similar to yours, but no cloves or xanthum gum. It is simmered to thicken.
