  • Ever wanted to make clear / transparent ketchup? Well, me neither, but I kept getting asked to attempt to make it after a fake photo went viral and as I’ve done some clear recipes before, it always gets my brain ticking to see how easy it is! Using the clear tomato soup recipe as inspiration we set sail to a transparent journey of ketchup wonder.

      I mean, clear mustard, obviously.
      You can't have clear ketchup and not clear mustard.
      Also, in America, mustard bottles have pretty much always been opaque yellow plastic, at least "yellow mustard". Brown mustard and dijon mustard usually come in clear bottles. It's a whole Thing, but nobody really knows why. Tradition, I imagine.

    Potato startch is the thing to use instead of cornstarch when you don’t won’t cloudiness , in the kitchen we use that when thickening raspberry cream and the like, keeps its vibrant and transparent.

    The pulp left in the sieve, is basically tomato puree, Barry. Thicken it a bit, add some herbs and seasoning, and sling it on a pizza Base. Or mix it into pasta with chilli flakes and anchovies.

    put agar agar in the clear liquid. After then when its harder, mixed and you have stable ketchup and its really firmer

      @@mrbarrylewisI Think agar agar (cooked, colded down and then blended) should do the trick, and keep it vegan. Also, manioca/yuca flour is a good clear thickener.

    You might want to try adding pectin to thicken it as well as part of the slurry because it might make the texture more ketchup like. And add vinegar too😊.

      Vinegar is just mild like citric acid, might do good with a bit of malic acid too, idk he said the tomato water was already quite brothy.
      the cornflower attempt would probably have been better than the arrow root one if he didn't stuff up that taste and make it too salty.
      the arrow root just made it like lumpy gelatin than a paste-like sauce

    Wild! Another good thickener is agar-agar powder! It's flavorless and colorless, made from seaweed, and often used as a really great substitute for gelatin

      @@cassie.m.0723 The only qualm I can think of is that the jelly has a different texture; agar agar jelly has a sort of soft "crunch" and a stiffer elasticity to it, while gelatin grants it the wiggly elastic mass we know of

    Better option for the thickener! Methyl cellulose.
    It's totally water clear, and it's used in cuisine to thicken up sauces, soups and gravies. It's very potent stuff, so you add it sparingly. Don't add tons, because it's a laxative in large amounts! End result will be more oozy, though you'll never emulate tomato ketchup because of how much it's made up of particles. If I were to do that... Plain flour would get you the particles, but white. End result would be cloudy, but "bleached" tomato ketchup could be a fun joke.

      arrow root powder is good and it is tasteless, so it doesn't ruin flavours of a dish

    Xanthan gum, available at tesco. Great to thicken sauces and clear once dissolved. You also forgot the vinegar in the ketchup! Another clear ingredient!!!

    The tomato pulp you had left over can be cooked down more and turned into homemade tomato paste. Or, add a few herbs and blend it again and you have pizza/pasta sauce. Really the possibilities are endless. Also, you really need to add vinegar to ketchup. That's what gives it its signature acidic bite, and balances out all the sugar.

    Despite how this is CLEARLY a bizarre recipe, it is not the most bizarre thing you've done. I'm quite happy that the results were so good, and much easier than the holographic chocolate from a while back.

    I love to see this, clear recipes and methods that are totally transparent 😛
    I'll second the xantham gum though, we used to use it for stiffening sugar paste to make flowers with (for decorating cakes). Ketchup typically includes spirit vinegar as well so that may be why it's a little too sweet.

    I’d be interested to hear whether it thickens to a more ketchup-like consistency if you put it in the fridge for a few hours, because even normal ketchup is more runny like that if you leave it out/store it in the cupboard.

    Ketchup also has vinegar in it. Also some spices such as onion, garlic, salt, celery salt, black pepper, mustard powder, and cloves. I recommend cooking the spices into the tomato liquid before you do the egg white raft so they won't discolor it later.

      I was gonna say too that even the original Heinz ketchup has vinegar and onion powder and "spice". Ingredients straight form their page: TOMATO CONCENTRATE FROM RED RIPE TOMATOES, DISTILLED VINEGAR, HIGH FRUCTOSE CORN SYRUP, CORN SYRUP, SALT, SPICE, ONION POWDER, NATURAL FLAVORING.

    I like this, brilliant method... Heston Blumenthal did make a clear tomato essence using the stalks of cherry tomatoes... that's the route I'd attempt as it keeps the colour out from the outset

    when you get to a certain level of interest (obsession?) in cooking you don't see a lot of new preparation techniques, it's refinement with different ingredients.. this was the first time i've seen the egg white raft and it was so neat to have this experience via your channel 🤣 well done! such a great finish too💜

    I use cornstarch all the time and you can prepare a better consistency by having a bowl of cold slurry and adding it to pre-boiled water while whisking aggressively. Add all ingredients that are needed to the cornstarch. bring back to a boil if you need to add more cornstarch slurry to re-thicken it. it’ll have a smooth and not gloppy consistency.

    Barry! You can fry off the pulp low and slow for a homemade tomato paste! Not sure what kind of flavour you’ll get from it, but it’s worth a try!

    I'm very tempted to try this the next time I make ketchup.
    I use a "Heinz fake" recipe, that uses apple cider vinegar, corn syrup, and sugar and spices, so getting the taste right as well as getting a clear product would be very fun, especially as you say the flavor gets concentrated.
    You should definitely turn your leftover pulp into tomato paste, it might not need more than spreading out on a cookie sheet to dry out in the oven.

    You could use agar next time also. EmmyMade does some Japanese clear recipes that use it. It’s also used to make agar plates for growing samples of bacteria and fungus!

    You should try Xanthan Gum for thickening it instead of arrowroot o, cornstarch or other agents. But it's way more powerful than the other thickening agents per volume.

      I'm not sure what you could use to get ketchup texture... Xanthan gum would make it more like a jelly I think. Part of the texture of ketchup must come from the tomato particulates, I think maybe a standard roux would match texture most but I doubt that would be see-through.

    Add flour and salt and make tomato tortilla chips (crisps, I think y'all call them?) with the extra pulp (u might wanna dehydrate the pulp first idk). Brush it with basil, rosemary and olive oil.

    Use a core rotary evaporator to distill the tomato juice after making the raft and straining it. That will intensify the tomatoe flavor.
    I cant remember if I used Pectin or Agar Agar but after adding your thickener set it over night. Cut it up and blend in a vitamix until smooth. It will have a better consistency and be almost the same as ketchup.

      I never tried an egg white clarification with tinned tomatoes, but I do it all the time with Agar, .2%(2gr per kg of tomatoes) Blitz the toms and agar, simmer for five minutes, pour in a baking tray and cool til set, score a 2cm grid and slide into a nut straining bag. Let sit in fridge for 3-12 hours, voila clear(amber) tomato water

    This is really cool! I was wondering why he didn't use gelatin instead of corn starch/arrowroot, but pectin sounds like a better idea!

    I was screaming arrowroot when you used cornflour! Now you need to attempt brown sauce (or mushroom ketchup or your own Worcestershire sauce!!). Genuinely impressed Barry! ❤

    The foam is caused by breakdown of marine algae and seaweed. It's not harmful (or check if you you have a waste water treatment center nearby it could be sewage as well)

    if you used yellow tomatoes would you have to remove less matter to get the juice clear? and then would keeping that help the texture?
