How to Make "Just Like Heinz Ketchup" with Fresh Tomatoes

  • KETCHUP RECIPE:
    Core and peel tomatoes. Then mash and simmer your tomatoes down to about half, stirring every 30 minutes. Then blend with a stick blender. If you don't want any tomato seeds, run sauce through a sieve. Then per quart of tomato sauce, add approximately (to taste):
    1-2 tsp. salt
    1 tsp. garlic powder
    1 tsp. onion powder
    1/2 - 3/4 cup organic cane sugar
    1/2 - 3/4 cup apple cider vinegar
    Bring everything to a gentle simmer for about an hour, or until desired consistency is reached.
    Then pour your simmering ketchup into clean, HOT jars and seal. Water bath as an extra precaution.

    Women that know how to cook, run a house, and give good counsel to there husbands are worth their weight in gold in todays world. My wife works very hard, homeschools, cooks meals, and does her own work on the side. A good woman is hard to find, then again I'm sure a good man is hard to find on the other foot.

    Thank you for the nicely presented video of making ketchup! I am a ketchup maker myself, and I love watching how other people make their own recipes. I have a digestive disease; and I cannot eat any skins or seeds, so I make my ketchup from passata (strained tomatoes). Since I'm elderly, disabled, and live alone, I don't need to make more than 4 pint jars at a time. So I use canned passata (the brand I prefer is Flora). I think my ketchup is as close as you can get to Heinz, and I include just a pinch each of mustard powder, cinnamon, celery salt, cloves, and sweet paprika. Only a pinch of each enhances the taste but doesn't overwhelm it. Anyway, great job and I learned some neat tips. :)

    Love it! I happily imagine early Americans preparing foods naturally this way. Hutterite and Mennonite Colonies prepare wonderful condiments aswell. I would rather spend time in the garden and kitchen than at the supermarket. I know it is convenient but still... There is no comparison in quality. Your family is radiant and vital appearing. These foods are gifts from God to sustain us. Thank you for your expertise and Thank you to the fine strong farmers who worked the fields for these fruits and vegetables.

    My mom would always put a bit of cinnamon (no other sweet spice) in her homemade ketchup and it was really, really good. Try it in a small batch sometime----It's surprisingly good.

    After peeling my tomatoes,I put them in a 5 gallon bucket with a drain valve on the bottom, let them set for a couple of hours,the water not juice goes to the bottom where I then drain out until it starts to turn pink,it cuts back on the cooking time by at least half

      Great idea. This year we've been roasting them in the oven to remove the peels instead of dunking them in hot water, and it separates the juices very well also.

    Very nice, I have been wanting to make my own, that way I can use some sugar alternatives for those of us who have sugar issues and boy is it expensive to buy good tasting low sugar ketchup.
    If you were to add the spices while its boiling it would boil they flavor right out of it. I made some of Kent Rollin's bean soup, Kent has been a professional cook for over 40 years. He said not to add the spices to the soup while it's boiling or the heat would destroy the flavor and he was right, I accidently forgot and added the spices in the 2nd time I made the soup and it drastically reduced the flavor of the spices. That's why you add them when you're ready to simmer and cook off that extra water brings out the flavor of the spices. You can also use and emulsifier blender if you like, I use one when I make my chili, I take canned tomatoes and put them in the blender. It makes some real nice thick chili.

      We eat it right after cooling (if we need it) or just put into storage until we do. Although, one could certainly give them a water bath to ensure even a better seal and storage ability.

    Yes! This is the type of information that is different from the rest I've seen or even tried. Now, would you recommend removing the seeds prior to the reduction period or as it is ladled into jars? And, did you bath the jars or let the heat carry them into being fully sealed on its own?       Thanks Paulla. Not sure when it'd be best to remove the seeds as we haven't even bothered. Just would have to try both ways and see what worked best. We didn't water bath, just let them seal themselves from the hot jars, hot lids and hot ketchup.

      You're welcome! We keep it for up to two years. We have not frozen it before, but imagine it could be done - probably in straight sided jars though.

    New to this canning stuff even tho I am an old gal. Another taught me to core 'n score them before anything is done to them. Did those jars need to be water-bath processed to be shelf stable?

      We should go through this within a year. The acidity and salt is quite high, was canned hot hot hot, and sealed quick so we're pretty confident it'll last and store well. Although, by means you can water bath! Gives that extra assurance :)

    When you remove the skins, if you also remove the seeds, it cuts down, not only on the seeds, but also the cook time! Just stick your thumb in each cavity run it around. Most of the seeds are gone and so is a lot of the runny clear juice!

    Yummy. How long are they shelf stable without water bath?
    I watched another homestead video where they ladled off the juice before boiling (canned the juice for drinking and soup base). It reduced the cook down time and the heat in the house. Not sure if removing the juice effected the flavor but they seemed pretty excited about their ketchup. =)

    Do you know what spice quantities would be needed if substituting 6 oz can can of tomato paste??? To make small batch ( imma single Pringle with no garden)

      Paste is quite thicker than sauce. I'd try doing 1/4 of what I call for per quart of sauce and perhaps add a couple tbsp. of water.

      Yes, they should work fine, although paste tomatoes work best as they have less juice to evaporate off. However, we generally use a mix of tomato types and just simmer them down to the consistency we want.

      Thanks Erick! In this video we started with 5-6 gallons of peeled tomatoes and ended up with 8 quarts of ketchup. We have the ingredients listed per quart of tomato sauce so it can work with however many tomatoes you have.

    We make the spicy ketchup. It doesn't really taste like "ketchup". It's more of a sauce I guess? Good on veggies, scrambled eggs etc.

    I used to help my mom on the farm 65 years ago measure out all the spices and chop peppers and onion and tomatoes to make real olde fashioned spiced ketchup and this is not ketchup but flavored tomato sauce with vinigar and a touch of sugar. yuk... powdered garlic and onions I don't think so ...we peeled and chopped garlic and onions this is not Ketchup however you look at it! I put everything thru a mill unless I want Ketchup relish. You young ones know so little and miss so much. Yup 73 and made this years batch of real ketchup!

    I has to be cheaper to buy ketchup. Aldis has a big bottle for about a dollar.

    No way in hell that actually tastes like ketchup. Ketchup is Ketchup. There is no such thing as a "better" ketchup. Don't try to fix something that is NOT broken.
