Copy Cat Cracker Barrel Meatloaf - Put a Little South in Your Mouth - Episode #84

ingredients
2 eggs
2/3 cup milk
1 sleeve Ritz crackers, crushed
1 cup chopped onion
1 cup green peppers
1 cup shredded sharp cheddar cheese
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 lbs ground beef
1 /2 cup ketchup
1/2 cup brown sugar
2 tablespoons yellow mustard
1/4 cup Apple cider vinegar
directions
Preheat oven to 350.
In a large mixing bowl add beef, eggs, onions, green peppers & crackers. Add cheese and milk. Mix well.
3. Bake at 350 for 30 minutes or until cooked thru.
4. Combine ketchup, brown sugar, mustard & apple cider vinegar to a small pot. Bring to a soft boil. Spoon 2/3 of the topping over the meatloaf after 30 mins of baking. Return loaf to oven for 30-45 more mins of baking, until thermometer reads 155-160*. Serve with remaining sauce.
