Creamy & Healthy Spinach Soup
I just love this soup when it comes to something light and healthy. It's so easy to make and you have a choice on how rich or light you want it. I especially like it cold in the hot summer months, it's a real treat to go with any BBQ.
Try it and let me know how you liked it and did you add any other ingredients to it.
Ingredients
1/2 pkg. - Fresh spinach
1-2 tbsp. - Butter, unsalted
1 sm. - Red onion, chopped
2 cloves - Garlic, chopped
1/2 tsp. - White pepper
1 cube - Veggies stock, low-sodium
1/3 cup - Creme cheese, room temperature
1/4 cup - grated parmesan cheese
Salt as needed
Water as needed
Option - Parsley as needed
Toppings - Parsley, parmesan cheese
Salt as needed

That looks delicious, my favorite soups are the cream varieties, mushroom, broccoli, chicken, potato…they’re heartier too, & perfect for warming up on cold days 🥘🍜🍲
