I have the exact same smoker... Some guy in the neighborhood was moving away and set it out on the curb to throw away so I loaded it up in my pickup. That was over 10 years ago. It was well used when I got it and I've used it over over a hundred times probably. Has a bit of rust now but still super solid and good as new. His estimate that this would be good for about 5 cooks is waaaay off. BTW... Just tighten the damn nut on the vent and it will hold it's position just fine, lol.

Actually I disagree, You can buy a Weber kettle and use it to smoke, I would use the money and buy the rotisserie modification and put another shelf in the Weber 😁
I always smoke on a good gas grill. Works perfectly fine and holds the temperature you set it to perfectly.
@@sbd421 weber kettle + a slow and sear is the best bang for the buck.
P JB why waste the money? 2 bricks standing on edge at around 40 cents each and a tray of water. Don’t get me wrong, if you want to spend more than the grill costs, maybe you have the money to buy a smoker. Me I would rather buy a brisket to smoke in my kettle.

I had one just like this. It was great ribs, tri tip, hens, links, turkey. Fire starter chimney is best. If you do leave grill thats is in the fire box the air circles better.

This was a good video. I like these kinds of interactions - they def help set channels apart from each other.
It really is a great design as one can get good results on an inexpensive unit. In 2007 I used a Char Broil offset smoker($150)and an even cheaper vertical smoker to compete at the Eat Vancouver BBQ contest where I got 8th (out of 25) in both beef brisket and pulled pork. Some of the competitors had BBQ trailer rigs costing $25,000 and from as far away as Texas.
The happy dance by Denise should be the way you judge all of your meals, makes me laugh every time
we have similar cheap offsets here in oz, people tighten the bolt on the side vent right up so it starts to bind, then you can stick the vent partially open.
also get a big fire going right across the whole smoker inc. the cooking side and burn off all that paint. then treat it like cast iron, with a very light seasoning to stop it rusting.
you can make metal heat deflector plates so you don't get hot spots at each end, and a bit of foil ducting to extend them chimney vent down to grill level so you get a more even temp.
theyre cheap improvements that'll help make it a little better.
Great video! I used a cheap smoker for a few years before it died. Cooked a lot of meals on it. But as anything the cheap ones don't last as long and are not Insulated very well. But they will cook some meals! Great video!

As far as offset smokers go you get what you pay for. You buy a cheapie smoker you get a flimsy smoker mine cost close to 400 dollars (US) and I've had it for years and it's a beast. The one you have might seem like its thin metal but once its cured and got smoke built up its gonna seem thicker and dude you never cook on a uncured smoker.
Probably a good option to take on camping trips. I can't fit my big offset smoker in the truck with everything else and it's too damn heavy to cart around.

looks to me that it did what it should do , but as you said it wont last a long time , but some foil could be used to catch the grease , but i think you be more happy with a used weber kettle from the used marked, works great for smoking to if you ask me :)

Shows your skills. Even with crap tools, a good cook can make something good. A crap cook blames the crap tools. I’ve had two cheap “vertical” smokers...one charcoal, one electric. Neither lasted more than two years. The charcoal one was better, the electric easier. Both Still made awesome chicken, pork, beef, fish, and veggies. 😁. Like this type of testing video...thanks!

the gamma has a jamestown smoker for 179eu. i bought it this summer. only needed to change the intake vent for something bigger. you should really check this one out.

I started out with one, made some mods on the fire box and a new grill grid... still in use as back up smoker. 5+ years.

The cheap offset bbqs are good to learn on (some need a few mods to make them work better). But if your serious and to get one half decent you will have to spend £250 upwards and I've seen them on Amazon up to nearly £1600😯. So I decide to build my own from a large propane 3mm thick mild steel tank and 3mm mild steel for the fire box and chimney frame 2mm box section total cost materials £375 total and my time......But guaranteed not to rot after one UK summer 😂Love your videos Man keep them up. Your teaching me sone good cooking methods 👍

Quick question, aren't you supposed to "season" your smoker the first time you fire it ?
A friend bought one sometime ago I assembled it while he went to buy the meat and other stuff and once I finished it stated in the manual that it had to be fired up in order to burn off any shipping oils or residue that it had and to season it in order to be ready to use, was it not your case ?
You are 100% correct, and anyone that says NO shouldn't be smoking anything..Take their BBQ card away...

Didn't season the smoker first. It's important to do a burn first to burn off the oils and other chemicals from the factory.

Man that reminds me of my early 20's when I was just getting started smoking. I had a 35 gallon drum smoker bought on clearance from the local grocery store. Firebox fell off during the first smoke. Built my own using firebricks on the left hand side of the main chamber. Lasted a couple of years until I could buy another. I will agree that you can't go too big (to a point) lol. My main smoker will hold 8 briskets and still has room for chicken and sausage. The only down side is, I don't fire that one up unless I am doing 80+ lbs of meat. It costs too much to feed the fire.
In my offset smoker I had to do one burn to clean the smoker from the factory grease

Use a water pan to stabilize temperature near the offset. If you are learning to smoke meat, Get a traeger grill for ease of use.

couple mods for using one of these for better long term success 1. turn the grate side ways in fire so there is more room for ash and air to come in from the opening. 2. any extra cast iron you can find and put it in the smoking chamber under the grates, those small cast iron brownie pans work great or any cast iron you can find at a thrift store. dont over spend here. but any extra metal you can find helps with the stable temp . 3 I places a half terracotta base plate over the smoke stack exit to bring the exit to grate level.. plus my smoker has lasted far more then ten smokes and i do 20 hour brisket smokes about every other month on it. i got mine from a thrift store on the cheap as but i have grown in my smoking ability's and now see the value in a more expensive smoker.

I just bought a cheap offset smoker because I wanted to see for myself how it works. That's pretty much how I ended up here, been looking for info on the thing. This was a great video and confirmed one thing I was wondering about the previous videos I have seen: why not add both charcoal and plain wood at the same time? It's what came to my mind but was suggested anywhere but here. Gonna so do that.
