  • Rhubarb Streusel Bread
    Yield: 2 loves
    Ingredients:
    1 cup sugar
    1 cup butter softened
    2/3 cup orange juice
    4 eggs
    4 cups all-purpose flour
    2 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    3 Cups fresh rhubarb, chopped
    Streusel topping:
    4 TBSP white sugar
    4 TBSP packed brown sugar
    2 TBSP all-purpose flour
    2 TBSP butter, melted
    3 teaspoons ground cinnamon
    Instructions:
    1. Heat oven to 350°F. Grease and flour 2 - 9x5 inch loaf pans.
    2. Combine butter and sugar. Beat until creamed. Add orange juice and eggs; beat at low speed just until mixed. (Mixture will look slightly curdled.) Stir in flour, baking powder, baking soda and salt just until moistened. Gently stir in rhubarb. (Batter will be thick.)
    3. Reserve 1 1/2 cups batter. Spread remaining batter into prepared pan.
    4. Combine all streusel ingredients in bowl; stir until mixture resembles coarse crumbs. Sprinkle half of streusel over batter in pan; gently press into batter. Carefully spread reserved batter into pan; top with remaining streusel. Press streusel into batter.
    5. Bake 65-70 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan and Enjoy!
    Strawberry 🍓 Rhubarb Bakery Style Muffins

    Yield: 10 extra large muffins
    Ingredients:
    1 Cup all-purpose flour
    1 Cup oat flour (can be substituted with all-purpose flour)
    1/4 Cup brown sugar
    1/4 Cup white sugar
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    2 eggs
    1 Cup yogurt
    1/4 Cup olive oil
    1/4 Cup milk
    1 tsp vanilla extract
    3/4 Cup finely chopped fresh rhubarb
    1/4 Cup finely chopped fresh strawberries
    Crumble:
    2/3 Cup rolled oats
    1/4 Cup brown sugar
    1/4 Cup crushed walnuts
    1/2 tsp cinnamon
    2 Tbsp butter
    Instructions:
    1. In a large bowl, combine the all-purpose flour, oat flour, brown sugar, white sugar, salt, baking powder, and baking soda.
    2. Create a well in the middle of the dry ingredients and add the eggs, yogurt, milk, olive oil, and vanilla extract. Mix all the ingredients together.
    3. Gently fold in the finely chopped rhubarb and strawberries into the muffin batter.
    4. Use six inch round parchment circles to make a muffin cup. (See video for details). Scoop the batter into the muffin cup, filling them about 3/4 full. Sprinkle the crumble mixture on top. Add on a bit more rhubarb for garnish and a sliced strawberry on the top!
    5. Preheat the oven to 425°F (220°C) and bake the muffins for 7 minutes. Then, lower the temperature to 350°F (180°C) and continue baking for an additional 20 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
    6. Allow the muffins to cool, and then they're ready to be enjoyed!
    Rhubarb Crisp

    Fruit mix for the bottom:
    3 cups finely chopped rhubarb
    3 tbsp flour
    ¾ cup sugar
    1 tbsp lemon juice (juice from half a lemon)
    Crisp Topping:
    1/2 cup butter
    1 cup brown sugar
    2/3 cup flour
    2 cups rolled oats ​⁠
    1/2 tsp salt
    1 tsp cinnamon
    Directions:
    1. Finely chop the rhubarb and place it in a bowl. Sprinkle sugar over the top, add the lemon juice, and let it sit for five minutes. This will create a nice juicy mixture. After five minutes, add the flour and stir to combine. Set aside.
    2. Combine the brown sugar and softened butter in a mixing bowl. Add the flour, rolled oats, salt, and cinnamon. Mix until you have a crumb-like texture.
    3. In a greased 8x8 glass dish or a dish of your choice, add the chopped rhubarb mixture. Add the crisp topping and press it on top of the rhubarb mixture.
    4. Bake uncovered for 40-50 minutes at 350°F. Serve warm with ice cream!
    Notes: You can store leftovers in the fridge and microwave a bowl for 30 seconds before adding your ice cream.

    I make this crumble, too! But I have a fast version. Melt 100g butter, add 100g Oats 100g flour and 50g sugar, apinch of salt mix it up with a fork. Cut Rhubarb into small pieces put it in a tray, put the crumbles above and let it for 30-40m in the oven 180°c :)
