How to Make A Christmas Cake - The Victorian Way

    Christmas is approaching so Mrs Crocombe is making a cake for Lord and Lady Braybrooke at Audley End House.
    This traditional plum cake is based on a recipe by Charles Francatelli, who was Queen Victoria's chief cook from 1840 to 1841.
    INGREDIENTS
    680g plain flour
    680g butter
    450g caster sugar
    450g dried chopped cherries
    680g currants
    680g candied peel
    225g ground almonds
    8 eggs
    Zest of four oranges
    15g ground spices (cinnamon, cloves, nutmeg)
    ½ pint of brandy
    For the almond paste:
    225g ground almonds
    450g caster sugar
    A little orange water
    3-4 egg whites
    For the icing:
    6 egg whites
    680g icing sugar
    Lemon Juice
    METHOD
    Preheat your oven to 160ºC, 320ºF or gas mark 3.
    Line a large cake tin with butter and greaseproof paper.
    Soften your butter, then combine with the sugar, flour and eggs gradually. Then incorporate the cherries, currants, candied peel, ground almonds, spices and brandy until you have a thick mixture.
    Pour this mix into your lined cake tin, then place in a preheated oven and bake until a skewer comes out clean when placed into the centre of the cake. This will take around six hours, but keep an eye on it.
    Once your cake is out of the oven, remove it from the tin and leave it to cool on a wire rack. You can then make the almond paste.
    Mix the ground almonds, caster sugar and orange water together in a bowl. Slowly add in the egg whites, and mix until the mixture comes together into a dough. You may not need to use all of the egg whites, so keep an eye on the consistency of the mixture so it doesn’t become too thin.
    Take your almond paste and roll it out until it is around 5mm thick. Using your cake tin as a guide, cut out a circle to cover the top of the cake, and a strip to encircle the sides. You can then place it over the cake, using jam or water as a glue if necessary.
    Next you can make the icing by mixing the egg whites and fine sugar together. Add a few drops of lemon juice until the mixture becomes spreadable. Cover the cake in this icing mixture and leave this in a dry place until it turns hard.
    You can then decorate the cake by piping on some more icing. It’s up to you to choose your decorating style, but if you’d like to keep it authentically Victorian we suggest writing a Christmas message onto your cake. You can add a little food colouring to your icing to create an array of colours for your cake.

      How do you expect Mary Ann to learn just how much of each ingredient, what it looks like, how much you should add for each step and how the cake batter should look after each addition if she doesn't [as an apprentice] spend time with a Master? She's not being put upon, she's being trained for a very important position in someone's house. I don't know if it's true for cooks, but generally, an apprentice's family would pay a fee for this valuable learning.

      Under the Wikipedia entry for Mrs. Crocombe, it suggests that Lord and Lady Braybrooke probably hired her after dismissing their French chef to save some money as even though she apparently was trained in the culinary arts by other men and would earn more for that, being a woman, she would still have been paid less.       It takes so long because of all the fruit and to stop it drying out. Nothing worse than a dry cake.
      Been making them for the past 30 years, tweaking the recipe a bit each time. If you ever want to make a shop bought xmas cake taste even better, flip it upside down, poke a few holes in it with a needle, and pour a few spoonfuls of brandy or rum over. Wrap it back up and leave it for a couple of days.

      Christmas cake is cooked at a low temperature, for a long time, so it doesn't go dry and horrid. Once it's cooked, you get a skewer and put holes in the top a d feed it with brandy every day for a month. I'm not joking. Couple of tablespoons a day. Till its about 80 proof. THEN you spread the outside with apricot Jam, to stick the marzipan to it THEN you do the icing and decorate it. That's why most people make the cake around now. October time.
      On the upside, I had my American family round for Christmas last year, ALL of which said they don't like fruit cake. Then I got it out, cut myself a slice, and had 2 slices left by the time they all went home! 🙃 it really is that good if you make it right, but it is a labour of love. And it will keep for MONTHS. Thats if you can keep your family away from it ðŸ˜

    I think I just realized why I love the recipes from this channel so much; it doesn't require any fancy equipment. No high-power mixers with a dozen attachments, no milk foamers, no pasta cranks, just basic tools that would be easy (and cheap!) to obtain.

      What Confuzzled Tomato said. England is cooler and damper than the majority of the US for most if not all of the year. Think of it more like the Pacific Northwest. Hot sunny days are possible, but in a big old drafty Victorian pile like Audley End even on a hot day it could be downright chilly in the inner and lower parts of the house. But the average summer temps in Essex even in July and August hover around highs of 70 degrees and back down into the 50s at night, so even those "hot summer days" really...aren't.

      Cane sugar originated from the Indian subcontinent. Before sugar came to Europe, the most common sweetener was honey.

      It takes 5 minutes to brew a proper tea, after setting out your tea things, heating your water, scalding your pot, for good measure scalding your cup, and pouring your water on the tea. If you want a proper tea break, at least another 5 minutes to enjoy the tea with a couple of biscuits or a scone. Implying that Mrs. Crocombe would do anything halfway, well, it's just, ... no. So, I can see her either pouring her tea, or about to settle herself down at her tea, with a small but good tea service, with a quote "I'll be with you in another 8 minutes. Do try not to burn the house down.". 8 minutes seems a reasonable time, and Mrs. Crocombe would never guess how long it takes to enjoy a proper spot of tea. She will know, to the second. And then she will probably have Maryanne clean the tea set while she goes back to work.

    I was a cook in service in the late 50's[ and the rest of my life] over the years I have had the pleasure of making Christmas cakes .I rewarded friends every year with one of' Sallies cakes'.Since retirement the cost of making a dozen cakes proved too costly.However I still make two for my family.I use an old Irish recipe .I also make my own mince meat which is also the best.I have had the pleasure cooking and baking for hundreds of people over the decades, mostly British in the Carolinas.I love this young woman making the cake.Merry Christmas friends.

      How lovely of you to share your story..💗 This is the first time I have watched a real English made Christmas cake. I am wondering why the uncooked dough is used to cover the cake then frosting over it? Otherwise looks really wonderful! I would love to visit such a grand house.💗

      @@karendixon401 it is not uncooked dough, it is a mixture of ground almonds, icing sugar and egg whites (sometimes egg yolks) called marzipan. It doesn't need to be cooked although the thought of eating raw egg puts some people off! If you put half the fruit cake mix in the cake tin, flatten it, put a layer of marzipan on it and then add the rest of the cake mix and bake you have Simnel Cake - a traditional easter fruit cake.
      And I still cook my fruit cakes in a modern oven on a low heat for about six hours too. I also boil the dried fruits in sherry and leave them to soak for about a week before baking. Also using barbados sugar and a touch of black treacle gives a deep dark brown cake. As someone else said here, make the cakes a few months before Christmas and keep them wrapped in parchment paper in an airtight container. Open them up once a week and drizzle brandy/rum/whisky -whichever you prefer - into holes poked in the cake with a skewer or knitting needle. Best thing about christmas!!!
