Watch what happens if you put a really light roast with citrus notes into a milky Starbucks iced fluff.. people will return it with complaints. It's just a preference, it's not that one is objectively better if you take more time making it. Some people will find what's supposedly sophisticated to be insipid

I think Emma really knows her audience and her coffee is designed to suit them. Teenage girls between the age of 12 and maybe 20 is her largest demographic, I don’t think many girls in those ages would have coffee grinders and the confidence of the tea bags would appeal to them immensely. Her fan base is also so large and dedicated that they would buy basically anything she tried to sell to them, I don’t think she set out to make good coffee for everyone but rather something to sell to her fans.

A note about the coffee in tea bag thing. Steeped coffee is the company that packaged the Emma Chamberlain coffee. Steeped uses a proprietary method to grind and package their coffee, they sell their own coffee, and other roasters employ Steeped to package their coffee in that tea bag form (e.g. Cat & Cloud have done/do this). Having bought a sample pack of Steeped's own coffee, I enjoyed them all and preferred the light and medium roast offerings. For people looking for an easy brewing method or are traveleing (I myself am planning on bringing Steeped coffee with me on my trip to Las Vegas) I'd say they're a good option.

Having discovered Square Mile through this channel brought some of their Sweet Shop espresso, which was absolutely delicious, every bit as good as the best coffees I’ve brought from Monmouth, which isn’t something I ever thought I’d say. Was gutted to miss out on buying some of their Rwandan filter coffee as I was too slow to place an order and it sold out, but now waiting on some Ilomba and Rotutu from them, which I’m very much looking forward to receiving and trying next week😊 So yes, 👍 to Square Mile.

  • @sailorspice

My problem with Emma’s coffee all comes done to the customer service, price, and info on the products. When i buy coffee i want to knows where its sourced and if the wages r fair for the farmers. Ive tried looking for info on the roasters website of where her coffee comes from and if it is fair trade etc but have had no luck. I also think the price is a bit expensive for something that i cannot brew the way in which I like (ie pour over, french press, etc.). The coffee itself is borderline for being expensive but added with the fact shipping is $5+ and there is no info on where exactly its being sourced from and who i wouldnt buy it again. That being said her coffee does taste decent but the cons outweigh it for me.

her new rebrand has a whole list of how it was sourced, and that it was fair trade/no pesticides and all of that. completely ethically made and it very much aligns with my moral code. plus she relaunched the whole company with beans/grounds/steeped bags. the relaunch is amazing and the taste/quality is immaculate. plus for that quality and the "coffee shop" level of taste, it is very affordable for how sustainably and ethically It was made as well.

James, I'm one of those strange dark coffee lovers. I've just moved cross country (LA to Indiana, US) and have a fine coffee shop right outside our complex. A mere 5 minute walk. Great exercise. But no dark roast. So I put on my James Hoffmann fan-hat (metaphorical) and spent the better part of two weeks of morning sitting in their shop. Each morning I purchased a cup of coffee and a refill. That was two different brews each day. They have a rotating origin each day, a house (medium) and two of their flavoured coffees (Jamaica me Crazy for the win, just because of Caramel flavours).
After two weeks, I gave up trying to be a US version of the illustrative Mr. Hoffmann. I gave up and had a caramel macchiato, then began heading down to one of those big name US coffee houses/bakeries that has a rather generic dark roast. Unfortunately, they also have scones. My taste buds are thrilled with the dark roast and scones, my waist line, not so much.
So, have you covered - if so I haven't found it in your library - a decent guide to how to roast dark? Or what to look for when we want dark roast, but don't want to bury the coffee in cream and honey? I judge the dark roast on how little of each I need to add to the cup.
Keep up the good work. Enjoy the videos, and I'm learning a lot. Even if it's that I'm not into lighter roasts for the morning multi-cup experience.
