Kohakuto Japanese Candy No Artificial Color Recipe | No Gelatine Jelly Candy Crystals 和菓子

  • Today let's learn to make some super tasty Japanese Hard Crystal Candy Kohakuto. This Kohakuto Japanese Candy is made with a natural coloring agent. This is a edible Jwelery candy. This Japanese candy kohakutou shows in mukbang shows. You can also find butterfly pea flower tea recipes online but with today here with butterfly pea flower extract we will make candies. This butterfly pea flower is a natural food dye.
    ►Ingredients
    Agar Agar - 6gms
    Water - 355ml
    Sugar - 340gms
    Butterfly Pea Flower - 4 - 5
    ►Method
    1. Mix all the ingredients and boil till the sugar dissolves.
    2. Strain and add it into a bowl to set the jelly.
    3. Keep it at room temperature for 30 minutes and refrigerate for 2 -3 hours.
    4. Take it out unmould and cut it into pieces.
    5. Dry these pieces under the fan for 4 days to 1 week.
    6. Flip it every day for equal drying.
    7. Once it turns hard candy is ready.

    I live in a colder, humid climate, and after four days, the candy was still very moist and tacky. So, I put several pieces of paper towel under the parchment paper, and now the candy is drying nicely.

      @deborahfreedman333 I live in similar climate. Did you cover the candies with parchment paper or leave out in the open? I worried about dust particles

    Fun fact, if you live at altitude and in a very dry place they can crystallize in 20 hours. At least that’s how long it takes me. Denver is very dry though, I know this result is hardly typical. Smaller pieces seem to dry faster, too.

      This candy is made with sugar, so if you place it under heat it will melt.

      Flan ingredients won't work, but you can definitely add strawberry flavor instead of pea flower.

    I tried this but with gelatin.. it has been 3 days and the candy is not showing any signs of crystallisation is this just bad luck or does it need more time?

      It depends on the climate as well.. if it is rainy climate it may take more time, try putting it under the fan.

    Why my candy is take time to make it hard? Is been sitting to dry like 10 days and my candy is melting in the sun? Yes is dried but is not very nice
