My first thoughts on this one were that pressure affects freezing and boiling points. The dry ice did exactly what I would have expected it to. This is probably the most scientific crushing experiment you have done to date. Great video!

For the nitrogen ice you need a little fence on the bottom tool cut with holes to allow the liquid past but capture the solid material on the top of the tool. lightweight plastic like from a milk jug should to it, held on with magnets around the outside.
Please crush a box of Pringles, to make all chips into one chip!

It's not a well known fact, but there's actually several different kinds of water ice at different pressures and temperatures. So I guess what came out from under the press at the water ice crush was a really rare material! Thanks for letting us see it!
