    I’ve just tried these flatbreads, all I had in the cupboard was some whole meal bread flower, they were easy to make and better that any flatbread I had had in the past, wonderful, every day is a school day!

      Most recipe will tell you to put the flatbread in a dry frying pan. I will try putting oil in the next batch.

    Just made a batch this afternoon ready for dinner of chicken and fish, wrapping them up to use up the leftovers . The olive oil does make a difference as does some cheese (used dried Parmesan). Thanks Paul.

    thank you for this brilliant recipe. I thought I had some strong white bread flour but I didn't, I had to use spelt flour and it worked perfectly, lovely puffed up flat breads

    I am making these, and your process was smoother than mine, but they turned out great! I added a little garlic salt after flipping and it's perfect.

      For me, it made 7 flatbreads....also I found it was a little too much water & had to add a little extra flour as dough became a little soggy.

    In the Middle East we use an outdoor ovens made of clay and we make big batches of this flatbread and freeze it.

    I've tried many different recipes but yours is by far the best results thank you. I would like to know how make them to stay softer for longer

      add some sort of fat: oil, lard etc, then let them steam to finish cooking by putting the cooked breads in some sort of bag/container. the heat will soften them.

    Hi Paul, great informative video. Can ask for your advice on all the different types of flour in UK? Ie - plain flour, self raising flour, strong flour, bread flour, pasta flour,. What’s the difference between baking soda & baking powder when should they be used and for what? I’m sure lots of people would love to see the basics.

    I make turkish bread which is very similar to this but I brush on melted butter laced with parsley and red pepper flake.

    Hi Paul. I tried the blueberry muffins yesterday and I’m wondering if it really is 550grams of plain flour? I ended up needing twice the amount of milk and they turned out heavy , had to turn the oven up to 180C fan forced? Disappointed as I know you are a wonderful baker. Maybe it should have been 350grams? Loving the series. From Australia, thankyou.

    Ok Paul, I made this tonight in a cast iron skillet. I used olive oil in the pan, I tried it so hot it was smoking, and tried it with less heat. I tried them with quite a bit of oil, and some with less oil. They were good, but they definitely took up a lot of the oil and I had a tough time getting the oil temp right. When the oil wasn’t too hot and smoking, they seemed to take too long and not puff so much. Should I have used a higher heat oil? Not used a cast iron skillet? In the past I’ve used a dry skillet...thoughts?

      i would personally avoid cooking in oil completely, this is a weird way of cooking flat breads and as you can see from the first one in this video, cooking at a high heat will char the exterior without cooking the actual bread (you can see it is raw dough in several places; it would not have been pleasant to eat). cook medium high heat with cast iron, that will give you the best results.

    Flatbread is an art in its own right. Look at what they do in South Asia. Forgive my skepticism but I can only hope this turned out good and not doughy or undercooked in certain parts.

    I think the secret to making most breads is to not fuss over them. That and 25+ years of experience. I best get started.

    Would it work, freezing the dough balls? It's only me and it would be convenient to have them to hand, plus I imagine making a smaller amount might be problematic. Thanks.

      yes you can definitely freeze them just wrap/cover them well to avoid freezdr burn

    In the US, we have AP, bread, and cake flour as the most common flours. (Wheat flours also, of course) Not familiar with strong flour, but I would guess he means bread flour.

      In Canada I would use, all purpose flour. We use it when we make bread so it will work for this.
