Watching today this wonderful episode where you idealize an evidently optimum grinded coffee blend, Bialetti's coffee greca and then, unbashfully proceed to fantasize about your beautiful and cracked porcelain coffee cup, suddenly made me remember a sublime quote, which I personally think that portraits the human being that you showed all of us that you truly were: "The beauty of broken people resides in the light that seeps through their cracks". No frills, just cool down to earth cooking. A great guy who loved cooking and singing the blues. I would have loved to have had a meal in his restaurant. Coming from an Italian family I like my Coffee like liquid gun power :-) I have a Moka Pot like that. I grind some dark beans. I put some Nestle Media crema table cream and whip it with a little sugar in the cup I might use honey next time. Thanks for the video Chef
