Chicken Tetrazzini Casserole Ingredients:
►12 oz thin spaghetti or linguine
►4 cups shredded rotisserie chicken *or cook 2 lbs chicken breast
►1 lb button mushrooms thickly sliced
►1 medium onion finely chopped
►3-4 garlic cloves minced
►2 Olive Oil
For the Tetrazzini Creamy Sauce:
►4 Tbsp unsalted butter
►1/3 cup all-purpose flour
►2 1/2 cups low sodium chicken broth
►1 Tbsp lemon juice
►1 1/2 cups half and half or sub with equal parts milk & heavy cream
►1 tsp sea salt or to taste
►1/4 tsp black pepper, freshly ground
►1/4 cup parsley, chopped, plus more to garnish
►1 1/2 cups shredded mozzarella cheese

I’ve prepared this recipe in several versions. When we didn’t have mushrooms we added broccoli and cauliflower. Also we used asparagus and arugula and it was equally delicious. It’s a fun, easy and versatile recipe. 🥦🍗

I made this last night, it was delicious! I had a lot of these ingredients already and some I just substituted. I used 2 limes instead of 1 lemon, my chicken broth was "fat free", and my half and half was "fat free" as well. I don't usually go for the fat free stuff but I had it on hand and just wanted to use it already. Also, I am not too big on mushrooms so I only used 1/2 a pound. I doubled up on the sauce recipe because I wanted it to be super creamy. I do not have one of those dutch ovens, so I used a heavy bottomed pot, and then I baked it in a casserole dish. My husband and daughter loved it and went for seconds lol :) So yummy and turned out perfect! Thank you!

I tried this recipe tonight, what a disaster. I was doing fine until I got the point where I throw the onion in the air and it lands fully chopped, mine just landed, broke my glass dish and spread glass all over my chicken . And then I tried to magically point at my garlic and crush it , I just got a stinky finger . (Great recipe)

We aren't the biggest fans of mushrooms so I use 8oz of finely minced mushrooms. This is still soooooo good. Made it dozens of times and it's a family favorite. Thank you, Natasha!!
I also add the small florets of 1 crown of broccoli and 1 chopped red bell pepper. A great way to hide extra veggies--no one complains. It also looks more colorful!

I’m going to make this again for friends coming over for dinner. I loved it when I make it the first time
Im a chef but i love to make my mom recepy similar to this (at home). I boil the chicken with garlic parceley and green leek. I filter the stock and use it to cook tagliatelly. The rest is similar to this. I use onion before mushrooms and i slice it smaller, the onions need more time to cook. I don't use lemon. I use choped thyme. Use cream and bechamel on top with mozarela to gratin and oregano on top. My favorite food.
Tunna version is also good. And faster... for the rush days... and salmon version with dill...
