Easy CHICKEN SCAMPI Recipe

- Chicken Scampi Pasta has a garlic butter sauce that is light, vibrant, and so satisfying. It was inspired by our Shrimp Scampi Pasta and the family licked their plates clean with this one.

CHICKEN SCAMPI INGREDIENTS:
►12 oz spaghetti
►1 1/2 lbs chicken tenders
►1 1/2 tsp fine sea salt
►1/2 tsp black pepper
►1/2 cup all-purpose flour
►2 Tbsp olive oil divided
►6 Tbsp unsalted butter divided
►3/4 cup dry white wine chardonnay or sauvignon blanc
►4 garlic cloves (1 Tbsp minced)
►1 tsp lemon zest from 1 lemon
►1/4 cup lemon juice from 2 lemons
►1/3 cup parsley finely chopped
►Parmesan freshly shredded to serve

We made this a couple nights ago, and it was a HUGE hit!!! My kids loved it, which is always a win. All I had to do was tell my kids "it's a Natasha recipe", and they were sold. They all took giant bites trying to copy your taste test 😂

Take the chicken out of the pan first, put the pasta in the pan and stir around then put in the bowl with the chicken on top. Add a little chicken broth into the pan instead of water. The pasta will not be so dry then
This is the first time I thought her recipe wasn’t perfect. I’d do exactly what you said! Nobody likes dry pasta… thats why she had so much trouble chewing it
The pasta water is for the sauce to stick to the pasta better.
I agree with taking the chicken out and adding the pasta. Even cutting the chicken into smaller bites to make it more manageable. This way you can leave the chicken in while adding the pasta. Water or broth should be added to the sauce while it is cooking, not after you drained most of the sauce out.

If coating the chicken in the sauce is really what's desired I would do what she did then take the chicken out. Then I would do what you said and add the pasta.
Made this last night and devoured it. Sooo good. Used chicken broth in place of wine, added red chili flakes and Italian seasoning

Absolutely cant wait.... I cook one of your recepies about 3 nights a week. Just got done with cooking shrimp the way you do for shrimp tacos. With panko bread crumbs, and saute them in frying pan. My husband loves it that way! So simple but probably would have never thought of it on my own. Lol also Im using the lemon aioli sauce to dip it in, leftover from making the shrimp cakes you make. DELICIOUS!!

I would definitely double the sauce, too. That pasta looked dry whether it’s fully coated or not. Just my preference, not being picky. I want to dunk bread in there! 😋 yum.

I made this for my family two nights ago, when I first discovered Natasha's video! The family loved the chicken pieces, however, we all felt that the "sauce" was sorely lacking. It had a very nice lemon zestiness to it, but it wasn't "sticking" to the pasta. I'd much rather have had a "creamy" sauce!

Is that wrong to say; I don’t know? I don’t think so, and I agree….But that can be easily remedied by just doubling or tripling the “scampi sauce” ingredients, I would think.
Yessss!!! I love extra sauce!! It makes the dish so much heartier! 😋
If you add about a half cup of the pasta water to the sauce, it’ll emulsify while you stir it and give you a thicker sauce, and more of it.

What kind of wine you put and if no wine any substitution I may add instead.

I give up and cut up my pasta! I don’t like wine, can you use anything besides white wine?
You could probably use chicken stock.
The alcohol will evaporate as you cook it down just leaving a sweetness , you could use a pear cider , again any alcohol will evaporate as you reduce it , failing that the suggestion below of a chicken stock but you wouldn't get the sweetness to the sauce you will using wine or pear cider

When we say it that way, ‘fun’ is an adjective. Saying ‘such fun’ makes fun a noun. Just a different form of the word. Like saying something is ‘so beautiful’ instead of saying something has ‘such beauty’.
It would be nice to use a wooden spoon to deglaze the pan. That metal on metal sound is not for everyone. The dish looks yummy 😋

Just tried this recipe as my son loves Italian food so Tuesday's I try a different recipe. So glad I found this. I made it, it was very quick and my son ate 3 plates of it! The chicken came out really tasty and juicy. Not dry at all. I added a bit of smoked paprika to the flour dredge along with some red chili flakes and ground pepper. I ended up drinking the rest of the bottle of wine so typing this with a slight buzz. I will have to add this into my rotation of recipes.

The tough tenderloin needs to be removed or you get nasty chews when you try and chew it.

I agree I use a fork and a pair of small pliers. Grab the end of tenderloin with pliers and slip it through the fork tadah tenderloin comes out easy Peasy

Yes, use the same measurement☺️
You can use chicken stock but you won't get the sweetness you would get from the wine , any alcohol will evaporate as it reduces so you just get flavour , you could also use a pear cider

Yeah but she still should buy a clue. It's not scampi. There's no scampi in it. Scampi is shrimp. The might be called a chicken piccata or chicken in butter and garlic sauce but it's definitely not "chicken scampi" as that's nonsensical. She must have learned her Italian cuisine at Olive Garden which is NOT an Italian restaurant.

Just add 1 tbs of olive oil to the water before adding the pasta and your pasta will never stick.
