Eggless Plum Cake | No Rum Christmas Fruit Cake | बिना अंडे के क्रिसमस फ्रूट केक | Chef Sanjyot Keer

  • Full written recipe for Plum cake
    Prep time: 20-25 minutes (doesn’t include soaking time)
    Cooking time: 1 hour
    Serves: 900 gm bar cake
    Soaking dried fruits
    Ingredients:
    Kaale kishmish (black raisins) 50 grams
    Bhure kishmish (brown raisins) 50 grams
    Hare kishmish (green raisins) 50 grams
    Dried blueberries 25 grams
    Tutti fruity 50 grams
    Orange juice as required
    Method:
    Use a glass bowl & add all the dried fruits further add orange juice as required so all the fruits are totally submerged in it, now keep it for soaking for at least 24 hours, you can also keep it for as long as a week, the more you soak the better the cake will be, make sure to keep it refrigerated while the soaking process.
    Once the fruits are soaked well in the juice, use a sieve and strain the excess orange juice, reserve the orange juice to be used later in making the cake.
    Molasses A.K.A. Blackjack
    Ingredients:
    Cheeni (sugar) 1/4th cup
    Gud (jaggery) 1/4th cup
    Water as required approx. 200 ml
    Method:
    Set a wok on medium heat, prefer taking a little deep cavity utensil, add sugar and let the sugar caramelize on medium heat, do not stir initially, as the sugar starts to get some colour, stir once and cook until the sugar melts and becomes dark brown in colour.
    Once the sugar caramelizes add the jaggery & stir continuously, cook until the jaggery dissolves completely & it turns blackish in colour, once you get that colour, switch off the flame and allow it to cool down a little bit.
    Further carefully add water gradually and stir continuously, switch on the flame & cook on medium low heat until it becomes semi thick in consistency, once that consistency is achieved, switch off the flame and allow it cool down completely, as the molasses cool down it’ll become very thick, that’s the consistency we need.
    Use a weighing scale & measure 50 gm of the prepared molasses, keep it aside to be used in making the plum cake.
    For making the cake
    Ingredients:
    Dry ingredients:
    Maida (refined flour) 140 grams / 1 cup
    Salt 1/4th tsp
    Dalchini (cinnamon) powder ½ tsp
    Laung (clove) powder 1/4th tsp
    Jaiphal (nutmeg) powder 1/4th tsp
    Saunth (ginger) powder ½ tsp
    Baking powder ½ tsp
    Baking soda 1/8th tsp
    Wet ingredients:
    Makkhan (butter) 100 grams
    Orange juice 75 grams
    Brown sugar 1 tbsp
    Prepared molasses 50 grams
    Condensed milk 140 grams / 1/2 cup
    Vanilla essence 1 tsp / 5 ml
    Badam (almonds) 40 grams
    Lemon peel of ½ lemon (grated)
    Orange peel of 1/4th orange (grated)
    Topping:
    Dried cranberries
    Tutti fruity
    Walnuts
    Almonds (slivered)
    Method:
    Take a little big size mixing bowl, add all the dry ingredients in sieve & sift well to add it in the bowl, keep it aside.
    Further, set a pan or a wok on medium heat, add butter, orange juice, brown sugar, prepared molasses, stir & cook until the butter melts, further bring to a boil.
    Now switch off the flame & allow to cool down a little bit, now add the soaked fruits, condensed milk & vanilla essence, stir & mix well. Further add this mixture to the dry ingredients & mix once, further add almonds, orange zest & lemon zest, use cut & fold method to combine the mixture well.
    As all the ingredients are mixed well, when you check the consistency of the batter, it is little thick as required, to make it a little thin, add the reserved orange juice that was used for soaking the dried fruits, I’ve totally used 6 tbsp of reserved orange juice, mix well and you’ve got the perfect consistency of the cake batter.
    Line a loaf tin with butter paper, I've used an 8 inch by 4-inch rectangle loaf tin, you can use a round cake tin as well, this batter will give you around 900 gm of cake so you can decide accordingly.
    Pour the batter in the tin and tap it on the counter table so to remove any air pockets in the batter, top it with some dried cranberries, tutti fruity, walnuts & almond slivers, bake it in a preheated oven at 150℃ for 1 hour.
    Do not disturb the cake for at least an hour, make sure to check the process of baking keeping the oven doors closed. Check the cake after an hour for its doneness by inserting a toothpick, if it comes out clean your cake is baked to its perfection, there will also be cracks on the top surface and it denotes its baked perfectly, if the toothpick is not clean you need to bake it a little more.
    Once baked, carefully take out from the oven and allow it to cool down for few minutes.
    After cooling down, run a clean knife from the sides and gently pull up the cake, remove the butter paper and your Christmas plum cake is ready.
    Slice it and consume accordingly, it can be stored in the fridge for up to a week.

    What’s up guys! Finally the recipe out, it got delayed a little bit with technical glitches but as promised I have uploaded the recipe today itself. It was a crazy night and a crazy day.
    The recipe turns out to be amazing, do try it.
    Also guys, I wanted to do this from a long time.       Wouldn't the black jack give a bitter taste...as you have cooked the sugar n jaggery for so long time..
      Like if we caramelize sugar even a bit more, it turns bitter..

    This cake turns out gorgeous!!! I felt like eating up the batter even before it was baked 😋 the recipe is so well done, it is foolproof. Only the blackjack is harder to make than it looks on video. I made a version with alcohol and one without and both are just superb. Thank you so so much chef!!! Big fan here

    I made this cake today following all the steps.
    Made black jack as well.
    The cake tastes amazing. The slight bitterness from black jack is cut by cherries and berries coming in between. It has perfect amount of spice and sugar.
    I will surely make this again.
    Takes a lot of effort to make but worth the effort.

    Last year I was looking for an eggless alcohol free version of the traditional Christmas plum cake. . Saw so many. N then came across Sanjyots recipe.
    It's seemed so easy that I decided of making this one... Altho other recipes were easier, but somehow my heart was convinced with this one...
    And now, come Christmas again, this is the one im gonna make again... Year after year after year... 🎉🎉🎉🎉❤

    I tried this recipe on Christmas Eve. I had soaked dry fruits in rum and brandy and added a little more rum to the batter. This cake came out perfect!!!!!!!!!!!! It was delicious!!!!!!!!     Hi Chef, My name is Bhawna Tyagi . I am a home baker and trust me i tried so so so many eggless christmas cake recipes in past. Infact even after doing paid courses for the same i could not make good christmas cakes with that perfect traditional taste and all. After giving up on all the hopes i came across this video and then i tried and trust me “I LOVED IT”!!!!. I got all my facts clear as this was a highly descriptive video! Secondly i appreciate how easy you made for me to make black jack this tear i made and store almost 500 grams of black jack in one go and stored it! Thirdly i made a few changes according to my convenience.. like i mixed all the spices together and stored in an airtight container. And I used half part oil and half part butter for the softness and lastly i whipped up all the wet ingredients and gave me that perfect spongy and airy texture

    What an amazing recipe and that too just when I needed it. I tried the version with eggs and it turned out perfect. But I'd like to add that if you are not using condensed milk you'd have to add around 1 cup brown sugar....1/3rd cup as mentioned in the recipe is not sufficient.

    Honestly , I was going through some Christmas Cake recipes yesterday and fortunately I found this one very convincing and authentic.     First of all, thank you so much for the recipe. It was delicious. Everyone loved it, especially my mom. She is very particular about food. I have a huge family so I made two loafs, but it wasn't enough. 😅😅 I'll be baking more this weekend for new year. 😁😁

    I baked this cake today with all the ingredients following all the measurements it turned out to be great. It was just melting in mouth I was feeling like finishing the whole cake alone but controlled myself 🥰.

      Yes tetra pack and followed all the procedure and bake it for 150 degree for 45min /1hr. Check it after 45 min

      So I made 2 versions. 1 with cranberry juice instead of orange juice, another with rum.. exact same recipe just replaced orange juice with equal qty to cranberry juice and rum, respectively.. And it was aweeesomeeee 😀😀😁 thanks so much for this recipe 👏

    What a detailed recipe! Its like attending a tutorial. I was mentally listing my questions to raise in the comments after watching the full video but by the end all my questions were raised by yourself and answered so well too.
    I always baked Christmas fruit cake with Cocoa. Never heard of blackjack (what a name!😁) before this.
    Chef Sanjyot I have one doubt still. Hope you will find time to answer.
    The caramelized sugar and jaggery syrup ..if we leave it in the pan to cool down before adding water, it continues to cook even off the flame isn't it? Whenever I make sugar caramel I add hot water after turning off the flame just when it reaches the colour that I want. It is safe enough then. Adding cold water of course should be avoided as like you said it splatters and can cause burn injury.
    So here too can I add hot water immediately after taking it off the flame to arrest further cooking? Will it affect the taste in any way?
    I have to bake eggless plum cake for my veggie friends in two days time and I have been checking different channels. All look good and shortlisted one recipe too, but yours sounds convincing. Will go ahead with this. If I don't hear from you by then I will make blackjack the way you have shown.

      I tried the way chef said pour water bit by bit from a careful distance, it doesn't splatter much other than the sizzling noise on initial contact.

    I've tried many recipies but this recipie reminds me of the imported plum cakes from US we used to get. Same rich taste. Made this for Christmas, making it today again. Awesome chef.     Made it yesterday, and oh my what an amazing texture, fragrance & taste.. had gone through soo many recipes but perhaps was looking for the right proportion, 1 cup flour seemed just perfect for a small family setup. Thank you for sharing soo detailed video with all the precautions mentioned.
    Making molases seemed soo easy in the way you explained.

    Thanks @YourFoodLab for the perfect recipe. I tried the plum cake for the very first time and it came out better than the ones I used to purchase. Recipe of caramel syrup is too good. That's the main thing apart from all other ingredients which sets the cake apart. I loved where you give options for alternate ingredients as well. ❤
